Undated bottle drunk 9/27/25.
Clear, bronze-brasz. Big, white head.
Not gonna lie, I haven't had PtE in a LONG time. Was never a huge fan, though can respect the craft. Certainly smells the part, with sweaty, woody hops and light pine and grapefruit. Clean, only lightly bready, with no resin or iced tea. Seems a great recreation/clone.
A bit malty with lots of bread and a bit more prominent caramel than I'd prefer in an IPA. Don't recall PtE being so caramelly. Pine, grapefruit, sweet, sticky white bread. Only modest bitterness. I guess this is an update, as it's certainly more contemporary (softer, sweeter, lower bitterness). The actual beer is made well: malty, clean, pretty well-attenuated. Honestly, take away the big caramel and this is a knockout. No alcohol or resin noted.

Undated can drunk 8/17/25.
Mostly clear, muted brass-golden. Large, off-white head slowly to cover.
Some good acidity in the nose similar to stone fruit character but also some unwanted phenols. Nothing heavy and I suppose few outside true saison snobs would care. But it's not up to the real Belgian stuff level. Lots of white pepper, light clove.
Really nice body, texture, malt depth and attenuation. This helps ward off the phenols they've created with what seems like a bit higher fermentation temp than I'd prefer. But there's still a bit more clove and heavy white pepper than I'd prefer. Still, a noble effort and this brewery is obviously quality as evidenced by the very nice malt depth and attenuation.

Undated can drunk 6/12/25.
Clear copper. Big, off-white head, well-retained.
Crystal malts add iced tea-like notes while hops show mild grapefruit, black pepper, and a touch of christmas. But they aren't overdone, overly piney, or resinous. Malts, while having that iced tea character, don't have any big toast. Clean, with fresh yeast and no flaw.
Spicy Chinook-like character with grapefruit rind and mild pine. No soap, no toast. Rich, malty body drying out fairly nicely on the finish. White bread, tons of fruitiness, mild spice/pepper and lingering, gentle grapefruit. Yeah, I can get behind this interpretation of a WC pale ale.

GBBF Day 1. Cask. Hazy yellowish gold beer, small bubbly off white head. Palate is light and fairly dry, decent fine carbonation. Thin but sweet malts. Nibbly hop spice. Reasonable citric hops, tastes like modern Mosaic in here. Light and semi dry finish. Alright.
