All of Cathedral Square Brewery’s bottled stuff is brewed in Weston, MO (I would guess draft as well) and has always been (someone needs to update the site). I have kept away from trying their stuff for this very reason. Weston has had a long history of making (really) infected beer but has recently turned things around. However, I stayed away anyway because of low expectations. Out of their lineup I first tried the Imperial Stout because everything came in bombers and I wasn’t willing to waste the energy. While not bad, it did not change my view. However, Cathedral Square released a few beers in 12oz bottles and I thought it is worth the effort. Anyway...

12oz bottle poured into a Blind Tiger Brewery weizen glass. Pours with an orange-amber color range and completely lucid. Aroma is muddled bitter hops breaking through a similarly muddled malt character. Flavor follows suit its almost completely an IPA centered on bitter hops that standout among the blah, discombobulated malt profile.

Bottom Line: unimaginative IPA with a faux Belgian aspect. Its just bitter hops. This would have been interesting in the early 90’s, now its just trite and messy.

Bomber from Wine & Cheese in Clayton, MO. Pours dark brown/black with a foamy tan head. Main aroma is chocolate but there is detectable burnt malt. Med body or better. It’s quite bitter. Probably from hop, but with the chocolate it’s much like baking chocolate. Rather unique IS.

Bomber in large tulip. This beer’s flavor is made up of watery bitter dark malts and bitter hops. No real flavor, no fun to drink.

Pour is a black with a small tan head. Aroma is a nice mix of chocolate malts, burnt brown sugar and coffee. Flavor is nice as well. Heavy roasted malt followed some caramel. No alcohol burn at all. This brewer has put out a few below par offerings but this is really solid.

22oz bomber from Pick’s poured into a snifter. Pours black with almost 3 fingers of dark tan head. Aroma is strongly milk chocolate with a little bit of caramel and some sprucy hops. Taste is medium bitter. Lots of dark coffee with chocolate and spruce. Medium bodied with a somewhat oily yet thick texture. Lively carbonation and a very long, very bitter finish. Overall, I’m really digging this beer. Probably the best beer offered from Cathedral Square.

Bomber from Wine & Cheese in Clayton, MO. Pours hazy gold with a foamy white head. Aroma is very ripe apple. Sweet golden variety? It’s a bit thin. Carbonation is not very intense. It is crisp and clean. Flavor is very apple. Better than many ciders! Not bitter. Not really sweet. Guess they nailed their goal.

22oz bomber from Pick’s poured into a Trappist glass. Pours a somewhat hazy dark nut brown with about a finger of off-white head. Very light aroma of caramel and a little grain. Taste is about the same. Lightly sweet, more lightly bitter. Taste of caramel and a little sugar. Medium bodied with a somewhat creamy yet kinda thin texture. Lively carbonation and a decently long finish. Overall, it’s not too bad. I’ll finish this bottle but probably won’t be buying it again.

22oz bottle from Pick’s poured into a shaker. This bottle almost exploded when I popped the cap. It sounded like I was opening a bottle of champagne. Pours a cloudy burnt orange with a small bit of bright white head. Aroma of citrus and wheat. Taste is lightly sweet and lightly sour. Some nice citrus notes in there. Medium bodied with a creamy yet sticky texture. Very fizzy carbonation with a long finish. Overall, not too bad. I would definitely drink it again for the $3 price tag.

22oz bottle from Pick’s poured into a shaker. Pours a slightly cloudy orange with a small bit of white head. Sweet aroma of candied sugar and a slightly off aroma...kind of like dirty socks. Taste is lightly sweet and lightly sour. Light bodied with a thin texture. Lively carbonation and not much of a finish. Overall, not bad. I’ve never had an agave ale so I have nothing to compare it to. Definitely interesting.

22oz bomber from Pick’s poured into a Shaker. Pours a cloudy orange with a half finger of frothy white head. Aroma of citrus and pine hops. Taste is medium bitter. Not much citrus but heavy on the pine. A good bit of coffee malt on the finish as well. Medium bodied with a creamy yet slick texture. Lively carbonation and a long bitter finish. Overall, pretty good. A lot better than I thought it would be at 3 bucks a bottle. There are better beers out there but this one is very good for the price.
