Description
The history of Parisis dates back to 2008 when Eric Esnault created a beer which is today the "mother" of Parisis: Bière de l'Yvette beer, which he then marketed exclusively in the region of Yvette. When Jonathan, then a brewer, met Eric by chance, the idea of an association seemed obvious for a major project: to create a quality beer for the Paris region. After more than 2 years of work, the two friends finally found a brew location in Epinay-sous-Senart. The first beer was brewed on August 8, 2012, and it was the beginning of a story.

330ml bottle. Murky, orangey amber colour with average, frothy, half-way lasting, minimally laing, off-white head. Fruity hoppy and minimally sugary malty aroma, notes of orange, blood orange, grapefruit, candied orange zest. Taste is moderately bitter, fruity hoppy, slightly sweet malty backbone, notes of orange, orange zest, some grapefruit, a touch of blood orange. Would have expected more tropical fruitiness from the Mosaic.

Hazy pale amber, good frothy white head, dissipates quickly, thin layer remains, good lacing. Aroma toasted malts, grain, nutty hops, bread, caramel. Taste medium sweet and bitter, malty, pine resin. Lingering dry bittersweet aftertaste, spicy notes, dusty and earthy feel. Medium body, oily texture, soft carbonation, not your usual IPA, well-made and tasty.

330ml bottle from the local Carrefour in Saint Germain, Paris. Pours clear amber, thin off-white head. Nutty caramel aroma. Taste has a deep, moderately sweet caramel amber character, soft malt, fairly straightforward. Ok.

330ml bottle. Hazy, yellow-ish, pale golden colour with average to huge, foamy, slowly osteoporosing, white head. Wheaty, slightly spicy, minimally floral aroma, notes of coriander. Taste is wheaty, spicy, minimally citrusy, hints of coriander, a touch of lemon. Elementary.

Clean citrus nose. Cloudy medium amber, small frothy off-white head, fairly lasting, good lacing. Aroma pale malts, pomelo, passion fruit, pine resin. Smooth taste, medium sweet and bitter, malty, citrus, pine and pine resin. Lingering fruity bittersweet aftertaste, orange peel, leading to a dry bitter finish, bit chalky. Medium body, oily texture, soft carbonation. very good intense and fruity DIPA.

Bottle from Terre de Boissons Calais and drunk at home. Hazy amber colour lasting cream head. Big head. Grapefruit hoppy aroma. Malt is there and supporter of the hops. Overly carbonated. Easy drinking good apa. Good bitterness on the finish. Good session drinking apa.

Bottle from Terre de Boissons Calais and drunk at home. Clear dark gold lasting white head. Sweetish triple. I like triples in general A little vegetal aroma with some sweet orange. Too sweet. Some candied orange peel. Some hop. I mean it has some ok stuff but its also a bit all over the place. Just too much sugar. Its very sweet. Hmm

Bottle from Terre de Boissons Calais and drunk at home. Hazy mid briwn russet colour lasting off white head. Nutty hoppy aroma. Some rich malt. Toffee malty ipa. No harm in that. Not my favourite style of ipa but this works well in fact. As i say some toffee and then the hops come through. A little pine and resin some harsh bitter finish. Yes a bit of an old school west coast ipa. I kinda liked it
