The story begins in college and continues until today with the opening of the O'Clock Brewing brewery... Between there were those years when the trio brewed for fun in the parents' garage equipped with the bare minimum and then there were also these trips to several producing countries, particularly in Northern Europe, motivated by their love of the fermented drink.
These three bearded friends and keen on good beers opened their brewery in the industrial zone of La Croix-Bonnet in Bois d'Arcy. The flavors are imagined by Kévin, with five years of experience as a brewer. The three friends want to move away from the French model and offer different beers.

Bottle. Color: Black, thin brown head. Aroma: Mocha, roasted malt, fruity notes. Taste: Strong mocha, dark chocolate, black coffee, roasted malt, boozy, subtle fruity Armagnac. Earthy. Full body, below average carbonation. Medium sweet, moderate to over moderate bitterness. Very nice and very well balanced. Great.

Bottle. Color: Slightly hazy amber, thin beige head. Aroma: Sweetish, Rhum, caramel fudge. Taste: Rhum, fudge, sweetish and malty. Subtle oak wood. Boozy. Spicy hints and some dried yellow fruit. Over medium sweet, moderate bitterness. Below average carbonation. Full body. Nice slow sipper, equals the Bourbon BA version.

Bottle sourced from Beerdome and drunk at home (02/12/2022) - New 🇫🇷 brewery ✅ bourbon aroma really floods out on open, lots of rich bourbon and taste follows, caramel and toffee sweetness, dried fruit, nutty accents, spice, very boozy and warming alcohol heat, bourbon soaked warming finish, powerful stuff.

Bottle. Color: Slightly hazy amber, very thin fast disappearing off-white head. Aroma: Bourbon, caramel fudge. Taste: Bourbon, wood notes, fudge. Very boozy. Spicy notes and some dried fruit. Over medium sweet, moderate bitterness. Low carbonation. Full body. Nice and boozy slow sipper.

Pour une triple française, cette side effect est plutôt pas mal. Si on prend en référence les triples belges, c'est beaucoup plus moyen avec notamment un sucre trop poussé, et un alcool, à 8,6 % qui fait globalement le job sans réellement se démarquer. Le visuel est sur un blond orangé quasi limpide avec une fine effervescence soutenue et une mousse blanche nappant quasiment la surface. Le nez est sur une alliance céréales, miel, pêche et coriandre. Sur l'attaque, une légère acidité se fait ressentir qui est compensé par la sucrosité. La deuxième est à la fois plus douce et épicée. L'arrière bouche est un peu plus sur l'alcool, ce qui fait du bien pour donner un peu de caractère. Bonne présence en bouche et longueur, le tout sans réelle variations. Acceptable, sans plus..

Bottle 33cl. @home poured into a shaker. Clear deep golden colour, good frothy white to off-white head, good retention and lacing. Aroma pale malts, grain, cereals, lemon, biscuit, resinous hops. Taste medium sweet and bitter, malty, grainy, light lemon, biscuit, pine resin. Medium body, oily texture, average carbonation, dry sweetbitter aftertaste, quite resinous, spicy notes, well-balanced, very nice.

Bottle 33cl. @home poured into a shaker. Clear pale golden colour, tall frothy white to off-white head, good retention, light lacing. Aroma pale malts, grain, lemon, bread, hay. Taste medium sweet and light bitter, malty, grain, light citrus, bready, resinous notes, light spicy notes. Medium body, oily texture, average carbonation, dry sweetbitter aftertaste, grainy, bit husky, light spicy notes, rather non-descript yet pleasant to drink, nice.

Pint at Hoppy Corner pours a mostly clear orange with a ring of white head. Nose has some punchy hops, some citrus zest, some soap. Flavors follow, I can't believe this is 8.5% because it reads session, honestly, soap and grist. Dry and bitter finish.
