The story begins in college and continues until today with the opening of the O'Clock Brewing brewery... Between there were those years when the trio brewed for fun in the parents' garage equipped with the bare minimum and then there were also these trips to several producing countries, particularly in Northern Europe, motivated by their love of the fermented drink.
These three bearded friends and keen on good beers opened their brewery in the industrial zone of La Croix-Bonnet in Bois d'Arcy. The flavors are imagined by Kévin, with five years of experience as a brewer. The three friends want to move away from the French model and offer different beers.

On tap at La Binouze, pours a clear gold with some white head. Nose is standard, some malt and grass, some citrus and soap. It's not charming, but not offensive either. Flavors follow, simple grist and grain, some lemon and a little herbal tea. Finishes dry, if not a touch watery.

T: full malty base, mellow fruity, spicy, honey, bit vinous, grainy touch, taste is better than aroma so not bad beer if I don’t feel here Belgium tripel, toasted tones, enjoyable beer.

T: medium body, herbal, leaves, caramel yet dry on the palate, bit toast, medium carbonation, red berries touch, nice balanced for the style, enjoyed for sure.

From tap @ La Binouze in Paris. Head is no real. Colour is pale gold, light hazy. Aroma is orange, bit grapefruit, tropical fruits touch. Taste is grapefruit, orange, pineapple, mango and pine touch, medium carbonation, nice balanced bitterness, not bad at all, enjoyed.

Bottle shared. Dark mahogany with small beige head. Brown sugar, bourbon, vanilla, dry oak, red ine, soft maple, lots of booze. Over medium sweet and medium bitter. Over medium bodied with lots of alcohol. Nice, but very boozy.

J'ai connu des Comètes plus étincelantes. Cette Double IPA met cependant bien en valeur le houblon Comet sur des arômes principaux d'orange amère et de pamplemousse teintés d'épices et d'herbes. L'ensemble manque cependant de flamboyance, de peps et de puissance pour nous faire toucher les cieux. En verre nous sommes sur une robe blond doré trouble avec une très fine mousse. Le nez est principalement tourné vers les agrumes sur de l'orange amère et pamplemousse avec du miel en complément. A l'attaque, épices et herbes apparaissent et viennent relever un ensemble qui manquerait de dynamisme sinon. Le malt est trop présent et écrase quelque peu l'amertume. Heureusement, cette dernière est plus vive en seconde bouche sans être cependant réellement saillante. Les arômes de miel marquent alors le pas pour davantage laisse s'exprimer les arômes houblonnés. L'alcool, quant à lui, fait le job à minima (8,5 %). L'arrière-bouche est à l'identique, appréciable et sur une bonne présence. Le final, moyennement long, revient cependant sur le malt avec des arômes de miel qui réapparaissent de façon plus notable. Rien de remarquable, mais agréable.
