The story begins in college and continues until today with the opening of the O'Clock Brewing brewery... Between there were those years when the trio brewed for fun in the parents' garage equipped with the bare minimum and then there were also these trips to several producing countries, particularly in Northern Europe, motivated by their love of the fermented drink.
These three bearded friends and keen on good beers opened their brewery in the industrial zone of La Croix-Bonnet in Bois d'Arcy. The flavors are imagined by Kévin, with five years of experience as a brewer. The three friends want to move away from the French model and offer different beers.

Tap at Kitsch. Slight hazy light golden. Lemon zest, indeed a lot of aromatic peppercorns, sweet pils malts, light biscuit. Medium sweet and bitter. Oily medium bodied. Nice.

Draught @ Konttori. Ratedo n 8.8.2023 Aroma has very sweet and strong chocolate tones. Flavour has orange, very dark chocolate. Intense and good slow sipper.

French stout aged in bourbon barrels, thanks to Meeki for sharing at his home tasting event last Friday. Pale greyish beige, opening, tiny-bubbled ring for a 'head' on a clear, very dark chestnut-brown robe with coppery glow - very dark indeed, but not black and in that sense not looking like a typical present-day imperial stout... Aroma of fondant chocolate, toffee, some bourbon but not very strong, caramel, odd hints of peppermint and dried basil, liquorice, walnut, some wet wood in the background. Sweet, creamy onset, some candied fig and dried elderberry, soft carb, smooth and slick caramelly maltiness with walnutty touch and dark-chocolatey edges; woody elements in the finish but not very tannic, nor does the bourbon flavour come through very clearly. There are tannins and there is bittersweet warming alcohol, but as a whole, this beer lacks the darkness, depth, volume and 'oomph' of what a contemporary BBA stout should look, feel and taste like - with that minty note only making it deviate further from this tradition. Nowhere unpleasant, but at least a bit off-topic.

Malty, citrus, leaves a long (not unpleasant) bitter aftertaste.

11.5 % Smell-weak malt, caramel, faint sweetness, alcohol. Foam- thin, malt, weak farts, weak alcohol weak bitter tones. Head is small, white, orange tint. Appearance- brewer bottle cap, simple label.Cloudy orange in color, no carbonation. From - snifter Taste - weak caramel, weak hops, bitter tones, alcohol. Bitter and hoppy aftertaste. Somewhat meh overall.
