Aucun doute, nous sommes bien ici sur une Rochefort. Superbe complexité, une puissance maîtrisée et un équilibre aromatique hors pair. Par rapport à la 10, un léger bémol sur l'équilibre structurel (je dis bien léger, car nous sommes ici sur une bien de haut rang), avec un alcool sur le final aux accents de gin/vodka quelque peu perturbant et une amertume que je trouve en l'occurrence légèrement poussée. Mais je suis dans le détail, et il ne faut occulter le plaisir pris dans cette dégustation, bière de haut vol dans la plus pure tradition trappiste. En verre, nous sommes sur un brun quasi limpide recouvert d'une fine couche de mousse. Dès le nez, on retrouve cette alliance présente également sur la 10 et particulièrement riche : poire, prune, figue, chocolat, réglisse, coriandre, cannelle avec un alcool chaleureux et une amertume fraîche. On retrouve cette fraîcheur à l'attaque sur une très belle complexité aromatique. Les arômes gagnent en plénitudes en seconde bouche pour notre plus grand plaisir. L'arrière bouche et le final verra ressortir l'alcool faisant un peu plus que ses 9,2 %. Bière qui mériterait sans conteste de vieillir, mais qui nous régale déjà. Merci à nos chers moines.

Vintage bottle poured in even more vintage Rochefort chalice. Clear mahogany with thick beige head that seems to last a lot longer get than fresh versions. After almost exactly 4 years the head is strong here! Quite fruity, but still some chocolate milk like the fresh versions, figs and raisins are coming on, soft berries. Over medium sweet and medium bitter. Almost full bodied with boozy finish. It is still very good, but I think this doesn't hold up to a fresh one from the same batch. This one tastes way older than it's actual age.

Bottle from Drink? Hebden Bridge. Darker hazy amber with an initial thick frothy head and bubbly-frothy afterwards. Light in terms of its typical Belgian malt styling, this despite its strength, which is well hidden within its fairly smooth tasting texture. Also has a hint of spice. A few yeasts can be found in its aroma.

Bottle from Drink? Hebden Bridge. Very dark with a lovely crisp smoothness that hides its strength very well. The alcohol isn't very stated here even though it should be, just a subtle liquorice sweetness to compliment the fine textured mouthfeel.

33cl bottle from Abeervinum, Rimini, Italy. Pours deep amber, with abundant but quickly fading white foam, very fine. Aroma is alcoholic and fruity, you'd expect to see fruit flies flying around the glass. Body is average, like carbonation. Taste is actually delicate, with sweetness not being overly dominant. Finish is fairly long and sweetish.

Õlle on selline jook, et iga uus kord kui klaasi või pudeli suule tõstad, siis leiad midagi uut, sõltuvalt tuhandest-miljonist pisiasjast, mis hetke olukorda mõjutavad. Seega piirdun iga õlle juures selle tekstiga.
