Hier brouwen we onze eigen lambieken op traditionele wijze en laten deze spontaan vergisten en rijpen op Franse eikenhouten vaten.
Van deze lambieken van verschillende jaargangen vervaardigen we de

Panda thanks to Cloin: Poured an orange with a bubbly head. Aroma is woodsy, oak, fruity, loads of funk, berries. Taste is funky tart fruits, berry, oaky, woodsy, tingly, berries, sour in finish.

Bottle split at the optimal climatic conditions tasting, Hazlemere, picked up from an online peddler 11/08/21. Hazed reddish amber with a good sized white cap. Nose is light funk, dusty red berries, oak, damp straw, berry must. Taste comprises funky berries, blackberry yoghurt, funk, barnyard notes, damp hay, lemon rind, wood must, vinous. Medium bodied, fine carbonation, semi drying close with a lightly acidic climax. Solid well balanced number.

Flaska från Belgiuminabox. Disig rosaröd vätska med medelhögt skum i med samma färg i ljusare nyans. Pigg och frisk syra och massor av bär i doft och smak. Ung och ganska snäll syra och mycket svart vinbär. Kan inte bli fel. Mycket gott.

Hazy blond colour. Aroma of cellar, cobwebs, cork. Dry, but with good body; too much carbonation, it's distracting; some Lambic profile, very light cork; but I sense too much acetic acid too; moderately complex, not a star though.

375ml @ SalesForce office. Bottled on 05-Mar-2018. Appearance: hazy golden with a white head. Aroma: funky, minerally. Taste: highly carbonated, minerally, still tastes less complex and bold as from big producers. Overall: not bad.

The organic version of Lambiek Fabriek’s blackcurrant lambic (so exclusively made with organically grown blackcurrants, grains and hops), also sold through, among others, the Bioplanet supermarket chain specializing in organic products. Very moussy, thick and membrane-lacing, frothy, beautifully pale pink head on a deep fuchsia-coloured beer, clear with deep ruby red glow initially, misty purplish red with sediment. Aroma of indeed ‘real’ sour blackcurrants the way I remember them from childhood, lemon, sour tomatoes, wood sorrel, light armpit-sweaty funkiness when warming up, minerals, raw rhubarb, white yoghurt, some green weeds and a vague sulfuric accent faraway in the background. Very crisp onset, rich in blackcurrant juiciness with a soft sweet core, acidic edge enhanced by the lambic’s own lemony-lactic sourness, and also that typical cassis spicy touch; outspoken minerality, almost magnesium-like, piercing through it all, accentuated by very lively, cava-like carbonation. Slender wheaty core buried under this cassis juice, dried by a complex of lambic acids but remaining primarily lactic and on the ‘malse’ side, staying focused on the blackcurrant till the last drop – after a Bretty funky touch (quite subtle but a bit more outspoken when warming up), astringent tannic effects from wood, berry skins and berry seeds and a deep earthy hop bitterish touch have passed, that blackcurrant pureness and herbality linger about. Dry, sour, juicy, very clearly blackcurrant: a lovely fruit lambic again, seemingly more ‘pure’ and radiant than the ordinary Black-Belle, though I would have to perform a side by side tasting for that.

Bottle shared in HW - cheers to Cloin. Pours deep red with a super tight, creamy white head. Tart and quenching finish, notes of berries, salt, light funk, old wood. Medium bodied with fine, massaging carbonation. Tart, lightly drying finish, mellow berries, woody notes, berries. Solid.

Tasting at Chez Cloin. Thanks to Cloin. Hazy amber beer, small pale cream colour head. Palate is smooth and semi dry, decent fine minerally carbonation. Soft malts, a light creamy sweetness. Fairly tart orange and lemon. Light finish. Slightly too acidic. But tasty.
