Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.
Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.
The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle pour with membership group+ at Camp Finale Tasting! Opaque dark brown with ring of head. Aroma is earthy malt, bourbon. Taste is strong bourbon, alcohol heat, earthy malt. Thick texture, medium bodied, lively carbonation, alcohol harshness. Don't want more of this.

1.5 liter magnum. #287/300. from our membership. Aroma is mild toffee, raisins, and bold barrel. Flavor is for sure a barley wine/stout mixed with plenty of barrel character. Some mild lingering alcohol warmth.

Clear dark amber. Off-white head.
Amber waves of grain. Caramel and vanilla. Sweet toffee.
Soft banana and caramel. Sweet vanilla and rice. Light pineapple. Fruity and acidic. It's a bit thin but the flavors are there.

Bottle at tasting. Light brown and rich nose. Tastes of thick bourbon barrel, rye, caramel, vanilla, rootbeer. Thinner bodied. Sweet finish.

1.5 liter magnum. #522/675, 10/ 2024 from our membership. Aromas this all amount of peanut butter like molasses. Flavor definitely shows Reeses pieces with marshmallow. I love the flavor. However, it does get progressively sweeter as I sip.

Magnum shared with membership group+ at Camp Tasting Finale! Opaque black with decent head and fair retention, nice viscosity, light lacing. Aroma is strong Reese's Pieces (including hard shell), marshmallow. Taste is strong Reese's Pieces, chocolate, marshmallow, alcohol twang in background. Thick texture, full bodied, soft carbonation and finish as taste. Elements are here but a bit sweet, slight alcohol twang detracts. Need a few ounces--not a Magnum. Hopefully it makes its way into a barrel at some point.

Magnum bottle. Dark pour and looks pretty good. Smells Reese’s and some marshmallow. I had s’mores last night and this isn’t way different. Tastes rich peanut butter band sweet marshmallow. Some soy sauce and chocolate. Not my style

Start of epic tasting, we have lots of brew but need to space out these heavy hitters. Light chestnut colored and small beige head. Nose is dried fruits and light bourbon. Tatses of dates, plum, vanilla, rootbeer, bourbon (although maybe not aged in this). Slick body.
