Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Tried next to the other Willet-verse collection. Aroma is Willett on top of maple, milk chocolate, and oak. Flavor has a strong malt presence and backbone that shows the maple and chocolate with a steady amount of Willet throughout. Not as spicy as the other variations. No ABV can be found, and the texture is very smooth.

Bottle pour from membership group. Opaque black with ring of head. Aroma is strong peanuts, malts and brown banana peel, background Willett heat. Taste is strong peanuts, roasted malt, strong alcohol heat/astringency, spiciness. Smooth texture, soft carbonation, alcohol heat/astringency, finish as taste.

Dark, clear. Viscous, little/no head.
Nutty as shit with an almond paste like character. Barrel even things out and there's dry chocolate with excellent barrel character. No booze, not sugary. Cacao and Willett spice with brownies.
Soft, juicy, chocolatey, lots of Willett spice with vanilla, fudge, good dryness and tons of barrel. Wow this is very, very flavorful, and uncharacterfully tasteful on the adjuncts.

500 ml bottle. Dated 04/21/2020. Numbered: 436 / 1200. Aroma is peanut and peanut shell right away. The flavor definitely shows peanuts, chocolate and bourbon. Not sure I find banana any place. However, this is over 11 months since bottling. Overall, even minus the banana, still real good.

Bottle pour with membership group. Opaque black with persistent ring of head, light viscosity and no lacing. Aroma is bourbon, toffee, sweet malt. Taste is strong sweet malt, bourbon. Smooth texture, soft carbonation, no alcohol presence, finish as taste. Nice balance.

Tried next to the other Willet-verse collection. The flavor is moderately spicy. Good amount of chocolate and biscuits. Willet she was a pretty strong presence after the set. Again, not a whole Lotta alcohol found.

Clear, dark, small, tan head.
Chocolatey and a bit raw, like the 4yr. Good spiciness, clean and well-presented.
Spicy as fuck in flavor. Light lead, with rich chocolate, fudge, fairly sweet. Drying out somewhat on the end with biscuit and fudge. Liquor and spice lingering. Lightly spirited, chocolatey and spicy.

Bottle (14.2%) shared with membership group. Opaque black with ring of head, light viscosity, trace lacing. Aroma is strong earthy malt, oak, subtle Willett, background sweet (maple). Taste is strong Willett, sweet malt, earthy malt, mild oak. Smooth texture, soft carbonation, finish as taste, no sign of alcohol. Not exceptionally strong but nice complexity and balance.

Dark, clear. Small, spotty, tan head.
Biscuit, dry toffee, toast and not as much Willett spice as the previous iterations. Biscuity chocolate.
Oh wow, but that's very bourbony in the mouth. Sweet, malty, rich, caramelly and lightly boozey. Sweet, chocolatey. Could be spicier and at least it's got good barrel character but I wish it were a bit spicier. Chocolate fudge and milk chocolate. Sweet and rich.

Tried next to the other Willet-verse collection. Aroma shows the same as the 4 and 6 year. Flavor is chocolate, mild spice and Willet is much more subdued than the others in the collection. I don’t find maple here at all.
