Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottles 343 and 385 10/10/2023 aroma is chocolate, bourbon, spice, light maple. Taste follows, nice balance between the maple, spice from the barrel. Really nice.

Bottles 156 and 131 of 420 10/23/23 split 4 ways. Aroma is not as sweet as the 4 and 6 yr notes of chocolate, hint of maple and spice. Taste follows not overly spicy but well balanced.

Bottled 4/29/2020, #160/1440, drunk 1/14/24. Dark, tan head to ring quickly. Fudge mixed with soft bourbon. Biscuit, bread, vanilla and marshmallow. Mellowed nicely. Soft malts, chocolate, vanilla, strong bourbon and sweet malts. Succulent with spicy bourbon, soft, round, rich vanilla and rich malts. Dries out lightly on the finish with mallow, vanilla, biscuit and such.

Roasted malty with lots of ashy charred malts, some coffee roast, cocoa, soy, full bodied, quite a bitter bite into the roasted malty coffee laden finish.

Sweet and lightly toasted malty with notes of toffee and caramel sweetness, caramelised brown sugar, some dried fruit shred, full bodied, vanilla and pecan nutty accents coalesce into the sweet malty warming finish. Lovely stuff.

På fat på Peders med P.N. Doftar vanilj ihop med röda vinbär o bourbon. Smaken lätt syra med lite mint o vanilj o fin bourbon. Mjuk o behaglig i munnen. God!!

Fatöl på Peders ihop med Peder. Här har vi kanel och choklad samt underkuvande fyllig bourbon. Spännande sjukt bra julöl . Öh god alltså med kanelen. På kanelen. Eller nåt.
