En 2015, riche de son savoir-faire, il est déterminé à faire revivre la tradition des bières artisanales montoises. Il s’unit alors à un groupe de passionnés pour créer la brasserie Saint-Lazare. Aujourd’hui encore, Saint-Lazare se définit comme un artisan “sur-mesure” de l’activité brassicole, axant son travail sur la qualité de ses produits et la production de brassins expérimentaux. Ce caractère unique prend vie dans une large gamme de bières d’exception où chaque recette est confectionnée avec le plus grand soin.

Aged sample Despite its age, seriously gushing to small, if persistent, just off-white head over clear reddish-foxy beer. Solvent, woodstripper, varnish. Sweet cherrysyrup. Oxydation (of course), estery. Sweet wine, oxydation +/- in check. Again sweet red fruit and just a touch of solvent. Drier finish. Bit still, dull-ish; lightly sticky, maybe medium bodied. OK, it's aged. But a 9% ABV beer lagered on wine barrels ought to resist better. Txs to Stef!

Slow gusher. Pours with a massive fizzy head that fades very quickly. Aroma and flavour dominated by raw bread dough and candy sugar. Clearly defective.

Kerstbier Festival. Hazy golden yellow beer with a white head. Aroma of mild herbal pale malt, ginger, honey. Taste of herbal pale malt, honey, ginger, high carbonation.

33cl bottle from Cora in Brussels. F: huge, snow-white, good retention. C: gold, hazy. A: citrus, floral, hay, pineapple. T: medium malty base, pineapple, citrus, hay, herbal, long lasting prominent bitterness, medium to high carbonation, something like hoppy Saison or Belgian IPA, enjoyable.

Towering dense white head over finely carbonated clear metallic golden beer. Very spicy, herbal nose, explosive aromas upon opening. Bit sweet notes too, malty, grassy and suchlike. Bitterish-herbal but mainly sweet, pale malts main flavour. Bitterishness seems to be linked to the hops - Chinook - but it doesn't show the typical fruity C-hops' profile. Dry leaves, dry-crusted milk. Medium bodied, slick as from herbal oils, medium carbonated, and a creamy feel from the very steady head. Ho-hum, 13 to the dozen, really. Txs to Stef!
