About
Since launching in early 2018 we have grown and adapted our setup to form a small but tight-knit team of six running the day to day operations of the brewery – Founder Sean, Head brewer Lally, Assistant Brewers Scott, Guy and Matt; And head of sales Arron.
Our motto is to never stop improving; we’re always learning and tweaking our beer designs to create the best beer we possibly can, packaged into only kegs and cans to optimise freshness and keep our beer tasting as fresh as it does from the source.

440ml can. Pours a very deep burgundy red, no head. Aroma of chocolate and vanilla, blackcurrant and sour cherries. Taste starts with chocolate, very tart sour cherries and blackcurrant, more dark berry fruits, lingering cocoa and vanilla, good balance of sweet and sour. Medium bodied, smooth - good in my opinion but definitely not "thick" like they said it was.
Decent pastry sour, not really my thing these days but it was enjoyable.

10/4/2026. Keg at the Isle of Man CAMRA 13th Beer & Cider Festival. Good pour. Fresh, hoppy, tropical aroma. Guava, peach, apple and blackberry. Dank, herbal, slightly musty edge. Moderate sweetness, medium plus bitterness. Medium body, smooth, quite lively (but then I have been on cask all afternoon). It’s typically Polly’s good.

Polly's Trio Of Tins Night At Home Beer#3 of 3. Golden coloured crisp can pour, nice and clean texture and taste. The latter aspect isn't full of flavour though, although the gentle fruity hoppiness that exists is fine enough, and the west coast styling is solid enough. Some of its strength is apparent.

Polly's Trio Of Tins Night At Home Beer#2 of 3. A hazy golden appearance, although quite a frothed head out of its container. Light citrus aroma, which is slightly more stated in taste, through a smoothish soft texture. There's also a hint of pine here. Low citric bitterness about it.

Polly's Trio Of Tins Night At Home Beer#1 of 3. A dankish hazy golden colour. Sweet-hoppy with its citrus and stone fruit mix and a hint of pine, but a little on the overbearing side coupled with its strength - it feels quite dense going down the palate. Aroma is stone fruity too.

9/4/2026. Keg at the Isle of Man CAMRA 13th Beer & Cider Festival. Cloudy murky mustard pour. Aroma is hoppy, spicy, citrusy, ripe tropical, rubbery, resinous. Medium sweetness and bitterness, lightly spiced. Quite full bodied, smooth, average to soft carbonation. Very nice, and sadly does put the same style local brews I tried before this in the shade.

440ml can. Pours black with a thin dark brown head disappearing immediately. Aroma of chocolate, raisin, vanilla, caramel, cinnamon. Taste is rich, sweet, chocolate, raisins, vanilla, caramel, well-judged cinnamon that doesn't overpower, bitter roast malt hints in the background. Full bodied, smooth.
