Description
Founded in 1784 by Jean Baptiste De Bruin and still a family brewery to this day; known as Brouwerij Schelfaut until 1919, when the name was changed to Brouwerij Bios by Paul Van Steenberge, who became the head of the operation in 1922. Currently operated by his great-grandson Jef Versele (since 1998). Underwent many technical upgrades and expansions since then, most notably in 2017 when new buildings were installed and production capacity was significantly increased.

On tap at Tipi de Siviez as White Otter. Unclear yellow coloured, small white head, coriander in the nose. Milky, bready, grainy, dominant coriander and sweetish finish. Moderate carbonation.

Bottle 33cl. @home poured into a teku glass. Clear amberbrown colour, tall beige creamy head, good retention a lot of yeast islets, good lacing. Aroma sweet and roasted malt, caramel, liquorice, sugar syrup, dates, raisins, spicy notes, yeast, shy alcohol. Taste medium sweet and light bitter, malty, caramel, raisins, some banana, peppery, yeast. Full-bodied, creamy texture, soft carbonation, lingering malty and spicy sweetbitter aftertaste, distinct chili burn in the finish, very nice.

Color marrón cobrizo, velada, corona de espuma beige abundante, cremosa, persistente y con abundante encaje, el aspecto de esta cerveza es para quitarse el sombrero. Aroma tremendamente agradable, profundo y complejo, notas de malta tostada, pasas, dátiles, higos, frutos secos, banana madura, sacos de trigo, especias, levadura... En boca mantiene por un lado la profundidad expresada por su aroma, y por otro añade un poco de diversión a la fiesta con una marcada y potente nota de capsaicina. Cerveza de gran equilibrio de fondo, el alcohol practicamente ni se nota, el punto picante es valiente y atrevido por su potencia, lo cual me encanta, definitivamente no está hecha para tiquismiquis. En general es una cerveza que va más allá del puro "fuego", encuentro que está llena de pequeños detalles para descubrir y disfrutar con paciencia. Es un buen trabajo y una delicia.

A clear reddish brown beer with a beige head. Aroma of strong dark malt, berries, raisins. Taste of red berries, raisins, caramel, strong dark malt.

A clear deep golden beer with a white head. Aroma of herbal and spicy malt, strong malt, yeast. Taste of spicy bitter hops, pale malt, herbs, decent belgian yeast.

Pours brown with a large pale tan head.
Nose shows soft roasted malt, golden syrup, brown sugar, spicy phenols and cloves.
Flavours include brown sugar, golden syrup, sultanas, booze.
Not sure about "imperial stout", more of a quad. But nice nonetheless.

From a 330ml bottle on 2/1/2026 (shared by Ed with thanks). Pours a dark brown with a biggish light tan head. The nose is lightly fruity with some chocolate notes. Tastes reasonably sweet, featuring dark and dried fruit, a good dash of chocolate and a touch caramel, proceeding to a lightish bitterness featuring some Belgian yeast at the back. The palate is slick the carbonation moderate. As some other raters have noted, it probably presents more as a mix of a strong dark Belgian ale and a quad, than an imperial stout. Still, it's very tasty and quite smashable for the size. Nice stuff.

A small bottle from the off-licence opposite Jing Mei fire station. Aroma: very malty. Appearance: opaque cola, a couple of fingers of tan cream. Palate: full-bodied and slick, average carbonation; finish is long, alcohol is quite discreet. Taste: heavily sweet with malt; unsophisticated and one-dimensional. I would hardly consider this an imperial stout, though I appreciate the booze.
