PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Copper color, no foam, smoky malt aroma. Flavor is sweet malt, toast, wood, caramel, floral and earthy hop, and smoke. Excellent example of the style.

16 oz. can purchased at The Mansion. Pours a clear light gold color with a white head and good retention. Streaky lacing. Lightly sour malts aroma. Generic malt flavor. Tastes more like a pale lager and golden ale hybrid, not a pilsner. Clean. Soft (not crisp) mouthfeel. A little sweetness. Enjoyable but forgettable.

Bottle from Beer Republic. 2018 version, 1st edition. Light hazy amber brown with an off-white head. Aroma is sweet, malty, caramel, tart, red wine and wood. Flavor is medium sweet and moderate acidic. Dry and moderate acidic finish. Soft. 140720

This beer is a dark mahogany-brown color with a thin bone-white head that dissipates quickly to a sparse outer ring. Spots of lacing on the glass. Aroma of dark fruit, yeast and malt. Medium to full body with flavors of dark fruits, earthy yeast, caramel malt and spice. The finish is spiced fruit and yeast. Pretty good overall.

This brew pours black with some brown around the edges, and a medium tan head that recedes steadily to a wispy film. Small patches of lace. Aroma of bourbon, malt and dark chocolate. Full-bodied with flavors of oaky bourbon, charred malt, bittersweet chocolate and coffee. The finish is oaky, boozy and syrupy with a bourbon and malt aftertaste. Good beer all around.

[ As Birds Fly South Rustic Sunday ].
ABV: 7.0%. Clear medium yellow colour with a average, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, wheat, funk, moderate yeasty, leather, saison yeast, grapes - light vinuors. Flavor is moderate sweet and light bitter with a long duration, wheat, funky, saison yeast, dry, grapes - green grapes - light vinuors. Body is medium, texture is oily, carbonation is soft. Can. Pours a near clear orange gold with a white head that dissipates slowly to the edges edges. Aroma has earthy sweet citrus and citrus rind with a hint of mango underlying. Flavor has flora and earthy citrus with grass and a bit of papaya underlying.
