PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Apricot color. Slightly sweet wheat beer flavor with a hint of crisp citrus. Dry and crisp finish that is slightly funky. Does not have the expected banana or bubblegum aroma.

16 oz can from Tavour. From the minute I popped the top I knew this was something special. It poured out like a black oil slick while sweet notes of Mexican chocolate wafted up my nostrils. First taste yielded a silky, smooth body with equal parts sweet and roast. Mexican chocolate follows with spicy notes of chili and cinnamon and deep rich dark notes. This is just Solid throughout and well worth seeking out.

Tap at Burial Forestry Camp, Asheville. Color is deep cloudy golden with small white head. Aromas and flavours: Fruits, citrus, peaches, some Belgian yeast.

Can. Pours a hazy earthy deep gold with a white head that dissipates quickly to the edges. Aroma has tart citrus and kiwi with a bit of grass and some light creamy sweet grains. Flavor has sour citrus and a bit of sweet kiwi with some acid and light grains backing.

Sour acid aroma with a little funky smell. Taste is sour and tart, slight sweetness underneath. Fizzy and easy to drink. Finishes with a slight earthy funk.

Dark black color. Sweet bourbon and almost soy sauce aroma. Sweet bourbon flavor with hints of bitter dark chocolate , vanilla, and mild coffee. Mild pepper aftertaste. Thick.
