PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.
AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.
ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

2019 bottle. Slightly hazy reddish-mahogany color with a medium off-white head that diminishes steadily to an outer ring. Strings of lace. Aroma of oak, cherry, yeast and malt. Medium body with flavors of tart cherry, oak, spice and doughy malt. The finish is tart and oaky with a lingering spiced cherry aftertaste. Good beer all around.

Bottle. Pours a a clear dull red with an off white head that dissipate to the edges. Aroma has sour cherry with an earthy oak and a bit of bread underlying. Flavor has slightly acidic sour cherry with an earthy oak and a bit of bread backing.

Can from Holiday Market. Pours a clear orange gold with a finger of white foam that dissipates. Nice floral hop aromas with bright strawberry, peppercorn and light pine as it warms. More strawberry on the palate with light coconut, pine and dry earthy hop flavors. Good crisp carbonation with a dry berry note that finishes with light peppercorn and pine. Really nice IPA.

Can from Holiday Market. Pours a dirty diswater brownish gray with no head. Clearly oxidized unfortunately. Flat nose with no aromatics...maybe some doughy yeast notes. Watery and thin palate, no carbonation. Nondescript fruit. Watery finish with no flavor. Birds Fly South have some canning issues from time to time that they should probably get sorted.

Can from Holiday Market. Pours a pitch black with almost no head. Big bourbon focused, wood-forward nose with cacao nib, smoked chipotle and dark chocolate aromas as it warms. More cacao nib, smoked pepper and bourbon on the palate with more wood and oak...light toasted vanilla underneath. Light blackberry, raisin and prune notes underneath as well. Lingering booze, smoked pepper and fruit notes on the finish. ABV hidden surprisingly well, with the chili spice taking a backseat...the chipotle notes work honestly. Very good.

Can at home. Dark pour with not the biggest of heads. Nose is roast and light coffee syrup. Tastes of char, coffee, grass, prunes. Creamy palate slightly thin.

Came blasting out of the can like I'd just won the World Series, so we're not off to a great start. Once the carbonation settled down: Seems to have some Belgian notes for a dry Irish stout, but I could be thrown off by the ebullient carbonation. Unsweetened chocolate meets roast, with a ester-lined background throwing up mild clove and vanilla, backed up by hints of cherry and smoke. Not bad, but not sure why a can that's been in my fridge for days opened like I just removed it from an industrial paint shaker.

Can. Pours a hazy yellow with a white head that dissipates to the edges and laces slightly. Aroma has dank citrus with a bit of grass, light papaya and sweet grains backing. Flavor is similar with sweet grains, dank citrus, light papaya and some grass in the finish.

Bottle. Pours a clear bright straw yellow with a white head that dissipates quickly to the edges. Aroma has a good amount of oak with some dry wine notes and a nice light barnyard funk supporting. Flavor has a bit of sweet grain with dry wine, a good amount of barnyard and some oak in the finish.

Can from Holiday Market. Pours a pitch, oily black with a finger of brown foam that lingers. Big fudge brownie batter aromas with dark chocolate, cacao nib, maple syrup, bourbon and vanilla oak aromas. Decadent nose, but in that classic stout sense...not a pastry stout. Full bodied on the palate with a well-rounded mouthfeel. Salted caramel, umami, dark chocolate and more brownie flavors. Lingering bourbon, salted brownie and maple on the finish. Really nice, balanced in your face BBA stout.
