A hazed golden ale with a very thin white head. In aroma, sweet fruity malt with light peach pulp, light tropical fruits, light mineral notes, pleasant. In mouth, a nice sweet fruity mix of peach pulp and Epsom salts, light Brett, light lactic notes, pleasant. On tap at Mule Bar.

A hazed reddish copper ale with a thin lacing white head. In aroma, sweet fruity malt with light ground cherry, light lactic notes, light cereals, very nice. In mouth, a nice sweet fruity malt with light ground cherry, light lactic notes, light Brett, very nice. On tap at Mule Bar.

500mL bottled March 2022, drunk 7/31/22. Clear, dark mahogany. Tan head steadily fades to ring. Very mild bourbon with light alcohol and a shit load of ash, licorice and dark chocolate. The bourbon is interesting with dry brown sugar and light vanilla on top of big spiciness. Initially this is just bone dry to a flaw. Roast, ash, licorice...alcohol and lightly spicy bourbon is just too much dryness for the incredibly highly attenuated malt. It's not thin or light bodied, just massively attenuated. It's not even too boozey or bourbony; just too dry. Light dark fruit, spicy bourbon. Gets a little bit softer as it warms but not enough to overcome the unbalanced dryness/acidity.

Brewery draught, 6/16/22. Clear, marigold-tinted-blonde with a medium-sized, white head showing moderate retention. Trappist yeast in the nose is strong and fruity with must and mineral and light wax and vanilla. Herbal and grassy hops with light pepper and rustic grains. Similar flavor full of yeast character: apple, pear, wax and vanilla with rustic grains and a medium body with soft malts and good attenuation. It's very, very yeast forward and not my absolute favorite expression of it, but the hops are a nice respite.

Brewery draught, 6/16/22. Minimally hazy, blonde-golden-maize with a massive, dense, white head showing strong retention. Beautiful white wine and lemon peel in the nose with hints of attenuated passion fruit and unripe guava. Opens up nicely over time, softening quite a bit. Light pepper, lots of cellar must and mineral with rustic grains that seem well-attenuated. Soft and malty with great attenuation and a huge depth of malt/wheat. Chewy biscuit and light dough with pepper, guava, mineral and white wine on the finish. No alcohol, weird ester, resin or flaw. Hops are certainly a big part of this, as they should be, but aren't overdone.

Brewery draught, 6/16/22. Blend Number 2. Clear, deep brass. Small, white head showing moderate retention for the style. Soft, round, tannin-heavy nose with strong yellow fruit, vanilla, very mild lactic acid and soft Brett. Honey and biscuit-like grains with hints of citrus peel on the finish. Clean and aromatic without any aggressive acidity. Soft, round, fruity and lightly sour with a soft, malty texture with dough and honey, as well as oak tannin and mild Brett. Lip-smacking sour acidity on the finish, but all in good balance. Reminds me most of Oxbow's Native Wild - must be a local yeast thing. Excellent, mild, but very flavorful and drinkably refreshing; just what a gueuze should be.

Taster at brewery. Hazy golden, ring of fine head. Juicy, fruity aroma with a hint of ABV. Taste starts sweet and is then overcome by a wave of bittering, resiny hops. Sticky. Almost creamy feel. Citrusy and tropical notes.

Taster at brewpub. Clear, pale golden, wispy head, solid lacing. Piney, hoppy aroma. Taste is sweet, resinous in the right proportions, so as to be not too bitter, but easily drinkable.

Taster at brewery. Light amber pour, spotty head. Light, sweet maple aroma. Taste matches the light maple notes to the sweet malt backbone for an overall flavor that just seems natural. Pairing brings an almost bourbon like character (minus the burn).
