Founded in 2010, Stillwater is an original nomadic beer project that utilizes the traditional brewery as if it were a studio - a place where beer becomes a canvas for creation, collaboration, and experimentation. For it’s founder Brian Strumke, nomadic brewing isn’t simply a job title. It’s a way to tell stories, engage with the world at large, and move through it on his terms.

In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.

Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.

A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

Bottle at the beer bistro.
Hazy golden pour, with a huge white head. Big earthy aroma, im gettin the sage, and some notes of lavender. Big hops, zesty citrus, some yeasty notes, with a nice corriander finish. Quite complex, mouth feel is a big fuller than i expected, but this was super satusfying, and refeshing. Finish was a touch dry, with some herbs, and more of the earthy herbs, and citrus zest.

Pint can from Total Wine Appleton, 2/14/25. Cool to find a new Stillwater in Wisconsin. Hazy peach, large tan head, average retention. Aroma of floral, soap, citrus. Taste is floral, citrus, pine, perfume. Well balanced. Decent.

Bottle at home. Aroma is floral, bready malt, banana, herbal, clove, earthy, bubblegum, fruity, apricot, yeast. Flavour is moderate sweet. Medium bodied, smooth beer. Fairly complex and tasty.

Bottle at home. Aroma is spicy, perfumed, ginger, zesty citrus peel, lemon, hay, wheat, yeast, floral, pepper. Flavour is light sweet and moderate bitter. Medium bodied. Well-made and fairly complex brew, but overall a bit too spicy gingery for me to return to it.

Bottle at home, cork almost went through the roof, but to my surprise a gusher did not follow in its wake. Smells funky, grainy. Aroma is malt, grain, bread, yeast, light fruit, some apple, barnyard, herbs and spices. Flavour is light to moderate sweet with a little bitterness in the dry finish. Body is medium, carbonation is high. Nice bready spicy funky Saison, a bit peculiar and not the most stable, but good.

Bottle at home. Aroma is sweetish malt, ripe fruits, spices, yeast, a bit perfumed, candy sugar, pear, vegetable notes, old herbal hops. Flavour is almost medium sweet with a moderate bitter finish. Body is medium. Decent, bit old, not really my style.

From tap at Oedipus International Beer Festival 2016. Aroma is light malt, mildly funky yeast, ripe fruits, touch of apples, light spicy. Flavour is above moderate sweet and a little bit tart with a light bitter finish. Body is medium. Bit of a sweetish Saison, enjoyable.

From tap at Oedipus International Beer Festival 2016. Aroma is roasted malt, chocolate, mild smoke, ’salmiak’ liqourice, touch of coffee. Flavour is moderate sweet and moderate to medium bitter. Good full body. Tasty Imperial Stout with a mild touch of smoke, which is the way I prefer my smoke.

From tap at Oedipus International Beer Festival 2016. Aroma is dark malt, resinous hops, roast, pine resin, mild smoke, grapefruit, chocolate. Flavour is light sweet and moderate bitter. Body is medium. Good Black IPA with a touch of smoke.

Bottle at home. Aroma is floral, grassy hops, spicy peppery yeast, white pepper, grainy malt, some herbal and peachy notes with a touch of bubblegum. Flavour is light sweet and moderate bitter. Body is medium. A tasty floral yeast delight.
