The Referend Bier Blendery practices the neglected art of waiting, of letting nature run its course, to produce a beer of depth and character inimitable through technological shortcuts or chemical interference.These beers are:
-100% spontaneously fermented
-no yeast cultures are added at any point in the process
-Fermented and matured in oak barrels
-neutral oak imparts little flavor and allows the beer to breathe
-Unfiltered, Unpasteurized, Unsweetened to sustain the beer's natural essence
-Built for posterity
-bottles are capable of decades of aging
-Acidic and complex (not basic.)

37.5 cl 2018 bottle from the brewery, via delivery back in their NJ days, 7/20/22. Bottled 5/17/19. Pours red. Cherry, wood, and funk. Tart and funky with an underlying sweetness.

750ml bottle pours a clear gold, a cap of white head. Nose is lemony, spruce, lemon verbena, light grist. Flavor is hand soap and lemon rind and plenty of big herbs. Spruce is clearly present. Bone dry finish, tart too.

(Draught at Beer Temple, Amsterdam, 4 May 2022) Hazy golden colour with frothy, white head. Fruity, sourish nose with notes of funk, gooseberries, hay, barnyard and grapefruit. Fruity, tart taste with grapefruit, grapes, funk, horse stable and a dry and tart finish. Medium body, dry. Fresh, funky and fruity with a refreshing acidity. Great beer!

Bottle share@Alvarado TTO, Himmeriget (12/05/2022) - Funky farmyard notes, straw, hay, getting some apple core, horseblanket, lovely acidity and mouthfeel, nice.

Taste: barnyard, tart and some oak barrels. Medium acidic. Balanced and refreshing. Next one please!

2018 bottle. Rather clear golden color with white head. Aroma is strong wood, funk, white grapes, leather. Taste is the same, kinda refreshing, some green fruits. Oily mouthfeel, fine-bubbled carbonation.
