Big cherry and raspberry, and just a wisp of vanilla. Ruby red pour with decent head and lacing. Tart finish. Nice balance. Tap at Sovereign.

375mL bottled 8/7/17, drunk 4/3/22. Clear golden-brass with a small, white head that steadily fades to nothing. Well, that's pretty spectacular...Beautiful, mineral-rich nose featuring a soft dose of sulfur, infinitely approachable lactic acidity and even a touch of tropical fruit. Honey and no alcohol or flaw. If you put this in a row of 10 other Belgian lambics, I'd be hard-pressed to believe you could pick this one out as American. In the flavor it continues to deliver. Soft, lightly slick, malt and wheat-based texture is well-attenuated but supple. Juicy grape showing hints of tropical fruit with rounded, mild, but flavorful and balancing bacterial/yeast acidity giving off a gentle, endearing funk. Wow, this is god damned amazing stuff.

Bottle at Black Christmas March 2022, magnum bottle, vintage 2018, 4 years old
Hazy to cloudy blond colour, with no head. Strong aroma of apricot and almonds. Strong acidity, it's fruity, but missing a higher level of complexity.
Good.

Poured from magnum at Black Xmas (2018 vintage). Quite hazy pale gold with small white head. Subdued apricot, slightly toasted nut. Interesting, there’s a certain subtle ness to it with a sour underlay. Decent.

375 ml bottle from the Referend, via delivery, 3/13/22. Bottled 8/17/18. Purchased back in their NJ days. Clear gold, bubbly, fizzy white head. Lemon and grass. Acidic, vinegary, and tart. Pretty good.
Oaky sweet funk with nice apple hints, like a light cider mixed with a medium funk oak straight saison. Fun! Almost perry vibes.
Bottled Jun 2, 2020. Pretty awesome kiwi fruity funk upfront and almost like a juniper finish. Gnarly flavors from just spruce but the base must be rye heavy? Whatever it is it's a great blend. -.20 rating cause the acidic finish is kicking my ass today.
