After my initial 5 gallons of cider made in 2005, I started planting up cider orchards. We now have over 1000 standard apple trees made up of 69 different varieties, all trying their best to cling on at 1000 feet above sea level. I have now got a feel for those apple varieties that work well up here (and the ones that rather wish they lived further South).

Cloudy gold with a bubbly white head and a slightly tart apple aroma. Has a kick of acidity up front, sweet apple juice flavour with a hint of vanilla and a dry sweet finish.

Clear copper pour with a white cap that dissipates to the edge.
Nose is caramelised apple, tannins, bitter sweet, light funk.
Taste comprises apple core, caramel, light acidic flicker, hedgerow, tannins.
Medium bodied, fine carbonation, light drying close.
Tidy.

3/9/2024. Bottle shared by danlo, cheers Ed! Pours clear orange amber with a minimally bubbly head. Aroma is sweet, woody, apple, caramel, leathery funky edge. Medium sweetness, light tartness. Moderate body, light carbonation. Drying finish.

500ml cider from Rosies Cider Shop. Deep golden colour, white foam head that quickly dissipates away and aroma of apple, fruit, wood, funk. Taste is slightly tart, tangy, apple, fruity, alittle skin, orchardy, with leathery funk and bittersweet tannins. Medium bodied, medium spiky carbonation, medium drying tannic finish. Nicely drinkable.

Box @ Bailey Head. Clear pale gold appearance, aroma is sweet acetic perry pear. Oily palate with a sharp acetic presence and a tangy tart perry pear fruit. Could do with more harmony, comes across a little savage.
