After my initial 5 gallons of cider made in 2005, I started planting up cider orchards. We now have over 1000 standard apple trees made up of 69 different varieties, all trying their best to cling on at 1000 feet above sea level. I have now got a feel for those apple varieties that work well up here (and the ones that rather wish they lived further South).

500ml bottle. Pours dark gold with medium carbonation. Aroma is medium dry musty apples. Taste has medium dry apple juice to start with a sweet finish.

Medium plus sweetness, moderate tartness. Medium body, oily texture, average carbonation. Nice sweet tart mix to finish. Enjoyed this.

500ml bottle from Purple Moose shop, Betws Y Coed. Pours clear gold. Aroma is oaky, dry cider. Taste is moderately carbonated, extremely dry with a woody tannic, edge, good farmhouse cider air with distant vinegar hints, finishing dry. Like it, has a nice scumpy feel about it.

500ml bottle from Purple Moose shop, Betws Y Coed. Pours clear gold, sparkling. Aroma of floral apple orchard, apple skin. Taste presents an appealing medium-sweet blend, blossoming apple fruit with vivid apple skin and core notes, lightly caramelised fruit with a great fleshy fruit character. Really changed my opinion on Rosies after trying some savagely sharp editions from box years ago.

BiAB at Nottingham Beer & Cider Festival 2021. Slightly hazy golden colour, no lasting head and aroma of fruity apple, mucky funk. Taste is fruity apple, mellow, with soft tannins. Medium bodied, low carbonation, medium dry finish. Quite drinkable

Panda 🐼 at home thanks to SHIG. A clear golden orange coloured pour with a decent white fizz that fades. Aroma is semi swet, brown sugars, licks of vinegar, spicy tart apple. little barnyard on the nose. Flavour is composed semi sweet, apple curd, light bark, spicy verging on vinegar. Palate is semi sweet, rounded, highish carbonation.

Panda at home, thanks to SHIG, 11/04/21. Clear golden with a decent enough white covering as ciders go. Nose is crisp apple, orchard wood, tannins, apple core. Taste comprises sweet apple pulp, apple pie, sugars, tannins. Medium bodied, fine carbonation, semi drying close. Ok but too sweet for me and lacking some balance in this respect.

Aroma of semi-sweet apples, caramel, sugary baked apple, light woody and mucky notes. Medium plus sweetness and light tartness. Medium body, quite fizzy. Drying, lightly tart and sweet fruity finish. Pretty decent.
