Batch 3 750mL bottle drunk 12/15/17.
Clear dark amber with ruby highlights. Great carbonation creating a white head that shows strong retention.
Light oxidation up front shows bread and very light paper character. Sweet caramel, raisin and figs are strong through the middle and it ends with light clove, pepper and moderate alcohol, though not sharp or aggressive. With warming and breathing more deep honey-like malt notes emerge, and Belgian esters contribute good fruitiness. Quite rich, but certainly not too sweet nor does it come off syrupy or underattenuated.
In the mouth it shows an interesting mix of sweet, rich honey and caramel malt character but also a moderate amount of marmalade-like character. No idea where that's coming from. Perhaps just strong acidity from the yeast mixing with the malt? Alcohol is warming and drying and creates a good balance to the malt. Finishes dry and with ample, tight carbonation. Nutty wheat creates a soft texture and the beer is properly attenuated with lingering malt, light alcohol and fruity esters. Excellent and has aged very well.

Juicy fruits and easygoing pine join with deep, honey-like malts and a clean, fruity yeast on the finish. No resin or alcohol, no big grapefruit-pine (though this is certainly a citrus-forward IPA). It's quite soft on account of the malt, with lots of spicy orange rind, cherry, marmalade and light pine lingering.
In the mouth it's extremely soft, malty, well-attenuated and tightly carbonated. Spicy orange, light nectarine, pear, apple and growing grapefruit turn to a lightly-to-moderately bitter finish that is well-balanced between hop acid and malt. Very fruity and even with impressively low resin and no alcohol or flaw.

The aroma is tropical fruit and mild floral hops. The flavor has plenty of fruit purée with a decent amount of floral hops. The bitterness is here and it actually is almost an IPA. I love Mystic as a whole and I know these are brewed to follow the trend of "milkshakes" IPA's. This is better than many I have tried because the hops still exist and help for balance in the beer.

2016 750mL bottle, TJ with the awesome horizontal share on 12/9/17.
Dark amber-mahogany, little/no head. Good clarity.
This one felt more like the entropy barrel version, with more of the grassy, papery, sherry-like notes in place of the richer, spicier bourbon. Lots of black pepper, light raisin and a bit more booze to this one. Seems like these barrel fermented a little more rigorously or for a longer period of time than some of the previous versions. But just by a tad.
In the mouth there are some interesting/unusual flavors of tea, salt and grassy vegetal notes. Soft again, as all of them are, with a malty and tannin-heavy texture, low carbonation and plentiful raisin-caramel. Light on the alcohol and properly barrel aged, with no dominance to the oak nor any heavy toast.

Same clear, mahogany-amber-auburn color with a small, buttery-tan head.
Nose is all bourbon: candy, port, spice, black pepper and tobacco. Light maple syrup-like character helps balance. Bit of booze on the end but it's not sharp and is perfectly complementary to the darker, richer notes. What it doesn't have is any toast to it, so it's completely fine with me that it's very bourbon-forward. The base malts definitely soak it up and it doesn't come off overdone. This series is trying to highlight certain barrels, so it makes sense.
In the mouth it's a pleasant mix of caramel and bourbon. Spicy and sweet with good acidity, no sharp or aggressive alcohol notes and a malty-soft body that shows good attenuation. It still tends rich and towards the sweeter side, but no syrup or cloying notes whatsoever. Excellent flavors. The base beer really stands up well to the barrel aging.

Immediately-fizzling, beige head. Clear, dark amber body.
Very sherry-rich nose has lots of grassy-vegetal character with tobacco and raisin alongside it. The Day of Doom very much comes through strongly and the Entropy barrels give the sherry. Little/no alcohol noted, which is impressive and seemingly well-aged with no oxidation or aggressive notes.
Soft and malty in the mouth, it's full of raisin, caramel and good acidity from the barrel and yeast. Not very boozy for its age and abv. Little/no carbonation concentrates the sugar, but it never threatens to cloy. Very nice stuff. This Day of Doom BA series seems like it's a prime candidate for aging.

Strong raisin suggestions fit the bill as it turns more dry through the middle, picking up black pepper and tobacco notes. Yeast has contributed a lot of vegetal character, not offensive or anything, but a strong sign of its young age. Alcohol is well-concealed for its size and there's no abundance of oak, sugar or any Americanization going on here.
Sweet raisin and fig up front dries out nicely with clove and pepper seeing to that. I'm impressed by how dry it already is and it really only needs probably another six months or so for the yeast to completely clean up the beer and some of the spicier, stronger phenols to soften, and for the beer to just homogenize in general. But it's certainly drinkable as is, and shows quite a bit of promise. Malty, soft texture with low but engaging carbonation.
