Description
We are a Bristol brewery called "The Ashley Down Brewery". Inspiration for the venture came during a visit to the Factoberfest at the Tobacco Factory when Vince Crocker and some like-minded friends decided to have a go at brewing their own. Since those early days, Vince has experimented in his garage with a small collection of homemade and bought brewery equipment. He has tried, tested and perfected many of his own recipes before coming up with brews heโs happy with.

Cask at the 2015 National Winter Ales Festival, The Roundhouse, Derby. Chestnut coloured pour with a light beige head. Dark fruit and roasted malt aroma which segues into the flavour. Malt heavy finish.

Gravity dispense at Pigs Ear โ14, day 1, 02/12/14. Clear chestnut brown with a moderate off white head. Nose is biscuit, toffee, dark fruit notes, straw. Taste comprises much the same, light charr, spice, toffee. Medium bodied, moderate carbonation, semi drying close. Adequate bitter, on the whelming side.

Cask-conditioned at the Hop House, Bristol 16/12/2014. Golden in colour, with a tight, white, head. Aroma of slight yeasty, stone fruits, and leafy hops. Flavour had more apricots and peaches, crisp malts and a lingering, bitter, finish.

Cask gravity at Pigโs Ear 2014. It pours clear deep amber with minimal head. The nose is toasty, porridge, varnish, wood, oiliness and brown bread. The taste is bitter-sweet, oily, brown bread, peppery spice, toffee, earth, umami aspect and charred wood. Light-medium body, low carbonation and oily mouth-feel. OK ESB at best, but far from exciting.

Pigs Ear. Cask. Clear deep red - brown beer, small pale tan head. Palate is dry with mild fine carbonation. Smooth dry malts, rich but not sweet toffee. Floral bitterness. Modest plum, only noticeable on the back end. Bitterish linger. Okay.

Pigs Ear. Cask. Clear paleish gold beer, no real head. Palate is light, semi dry and a little crispy. Light pale malts, trace of cream. Hops are a light grapefruit and orange peel. Light dry finish. Okay golden.
