Today, we’ve outgrown our roots as nomadic brewers, and operate out of two production sites. The first, a brewery we built in St Werburghs, Bristol, is where we focus on our core range of beers, constantly refining the recipes to bring you an ever evolving, perfect pour. New challenges continually arise and are met by our talented team of resourceful brewers, as we continue producing top notch beers whilst adhering to strict social distancing measures. Usually host to our tap room, we’re already looking forward to re-opening the York Street brewery to our friends, family and local community for fresh beers once we all come out the other side. At our second Bristol site, the Barrel Store, work continues on our complex, mixed fermentation and wild yeasted beers. Here, we serve as custodians over our barrel-aged brews as they develop on different kinds of wood.
Ever evolving in the quest for refinement, all of our recipes stem from the desire to create something beautiful and delicious.

Cask handpull at brewpub Bristol. Clear amber brown colour lasting beige head. Malty aroma. Smells and tastes like a best bitter. Moderate bitterness on the finish. Very English malt and hops. Bit I like it. Twiggy brown beer but done well. Decent.

[44cl can from Beer52.] A peaty brown pour with a thin tan head; chocolate aroma with a hint of smoke; milky body with a dry chocolatey taste; and a pleasantly bitter finish with some toasted grains. A solid stout.

[Cask at the Greyfriar, Reading.] A hazy amber pour with a thin cream coloured head; light spicy hop aroma; smooth biscuity malt body with a fruity bitterness; and a drying finish. A pleasant best bitter.

Keg draught at the Canalhouse, Nottingham. Dark black, opaque with a tiny khaki head and a fair bit of lacing. Taste adds that boozy element, like a vodka-laced martini. Some grassy notes with notes of salted blackberry. Full, thick body with plenty of carbonation. I don't see a lot of Wiper & True, and tend to think of them as second tier, but then I have something as masterful as this. Wow.

440ml can. Pours near black with beige head. Aroma of roasted malt, some liquorice, fruit cake, light smoke. Taste certainly has a roasty bitterness with smoke and dark fruit notes but also quite sweet towards the finish. Medium to full bodied. Somewhere in-between a dry and sweet stout; quite tasty.

Batch 24. Malts: Golden Promise, Chocolate, DRC, Roasted Barley, Flaked Malted Oats, Wheat. Yeast: Surebrew YS020. Hop: Mount Hood. Bottle from Bierkoning. Aroma is dark malt, powdery milk chocolate, vanilla, creamy milky lactose, cocoa, oats, nutty notes, hint of roast. Flavour is medium sweet and light bitter. Body is thin, fairly watery, with some milky creaminess and low carbonation. Some nice flavours in there, but a bit too watery for my taste.

From tap at Bierproeflokaal In De Wildeman, Amsterdam. Aroma is intensely fruity and strong tropical with citrus peel, orange, grapefruit, mild pine, and soft pale malt. Flavour is above moderate sweet and medium bitter. Body is medium. Lovely well-rounded IPA with tons of fruity hops.
