A deep dark stout with a thin creamy moka head. A nice chocolate and butterscotch aroma. In mouth, a sweetish chocolate with licorice and butterscotch. Medium bodied. On tap at brewpub, July 20, 2008, shared with Muzzlehatch.

Tap: Poured a bright slightly hazy golden color ale with a nice medium size pure white head with good retention and minimal lacing. Aroma of typical Belgian saison yeast is very interesting with some light floral hops presence. Taste was well balance between the typical lightly funky yeast with a nice malt bill with some medium sweet notes and a light floral hoppy finish. Full body with great carbonation and no apparent alcohol. Very well done and this definitely makes me want to try some more of their beers.

Tap at Blind Tiger - I was a big fan of this one - very cloudy golden beer - nothing particularly wheaty about the aroma - it’s mostly floral, with some mild fruity sweetness, some soft earthy notes - very light and refreshing, with notes of citrus that play off the moderate hop profile and lightly tart wheat flavor really well - there are some earthy, spicy, and floral qualities that make the beer taste almost like a saison - very tasty - I would love have a pitcher of this on a hot day.

Tap at the brewpub - clear golden with a fiery orange tint to it - spicy hop aroma, with grassy notes and touches of dried herbs - refreshing and crisp, with a light buttery flavor, touches of wildflowers and honey, and a strong european hop bite - a complex and refreshing kolsch.

Tap at the brewpub - burnt brown/copper pour, with a lasting head - more of an american hop profile in the aroma, but that can be forgiven - toasty, with light caramel and roasted nuts throughout - a touch of mineral flavor makes the beer taste more "authentic" - one of the better beers I had here.

Tap at the brewpub - bright copper beer with a frothy, lasting lace - strongly herbal aroma, with quite a sweet, almost sugary smell to it - medium hop bite up front, but quite a high sweetness combines with the hops and herbal notes, making the beer start to taste like hoppy iced tea after a while - light buttery flavor - too sweet and lacking balance.

Tap at the brewpub - cloudy brown with a lasting, off-white lace - aroma of carmelized brown sugar, plum and other dark fruits - light mustiness and candi sugar - medium-sweet, with brown sugar, dates, raisins, a hint of rum and a light alcohol warmth - I really enjoyed this one.

Tap served in a tulip at the brewpub - a fairly safe saison - slightly cloudy golden straw color - light floral, potpourri-ish aroma, with notes of lavender and some crisp, grassy hops - soft carbonation - somewhat grainy and quite dry and earthy, with notes of wildflowers and a touch of honey near the end - lacking the complexity and "umph" of better saisons, but tasty for the summer months.

Draught at EBF on 2/10/07
I think this beer epitomizes what I like in a beer. For as much sour/bacterial/barrel-aged craziness as I appreciate, I think this is every bit as good. I think Paul (dickinsonbeer) said it best when he had a sip of mine and said, "It’s ok, kind of boring." I couldn’t agree more. The sweetness level is balanced leading to no remarkable dryness or sweetness (tends slightly sweet) and even the malt profile itself is balanced between light and dark. It’s got a deep, faded brass color with strong auburn-copper hues. It’s not a dark beer, it’s not a light beer. I absolutely love how it has a noticeable chocolate flavor, yet it’s not a dark brown beer. The malt is moderately complex, with raisins, chocolate, caramel and some buttercream flavors all being quite soothing. Minor bitterness from the hops, with just a reserved, earthy, herbal flavor. Carbonation is moderate to low and the beer is unfiltered/unpasteurized. Very light fruitiness, I assume from the yeast lends a gentle dryness/acidity on the end. Boring for sure, as in nothing jumps out at you. But everything works in perfect harmony, creating a balanced, flavorful beer. I doubt you could find a bad thing to say about this beer if you drank a whole barrel. Paul is doing some fantastic, authentic stuff up in Burlington, I really miss this place.
