Description
We think life’s too short not to enjoy what you do, so we decided to brew. First and foremost we brew beer for you to enjoy. But we also think the art and science of brewing is fascinating so we’re going to share that with you.
We’re interested in creating good chemistry in its broadest sense – not just in the quality of the beer we brew, but using that to allow us to celebrate community and relationships across science, the arts, music, food, and social experiences, as well as beer & brewing. We might be biased, but we think Bristol is one of the best cities in the UK, and we’ll shout about that as much as we can.
The brewery was started by Bob and Kelly in 2015, finding a home for the 10 barrel kit in St Philips in East Bristol.

Dan's Stag. Beer Emporium. Bristol. Cask. Opaque dark brown beer, patchy pale tan head. Smooth and semi dry palate, modest fine carbonation. Smooth mellow and sweetish dark malts. Trace of dark chocolate. Reasonable dark fruits. Mild spice on the light dry finish. Okay.

Keg at RNV. It pours near black with a small tan head. The aroma is sweet, oily, sticky, fruit cake, vanilla, oak, earth, leather and cocoa. The taste is dry, bitter, earthy, chewy, tarry, leather, peppery spice, tannin, oak and wood with a drying finish. Medium body and fine carbonation. Not bad. A bit drying.

Dan's Stag. Beer Emporium. Bristol. Cask. Almost clear rich gold beer, small cream colour head. Palate is smooth and mildly dry, modest fine carbonation. Grainy malts, dry and not that sweet. Floral bitterness. Dry finish brings some citric peel. Dry and fairly dull.

Draft at the Royal Naval Volunteer - Bristol. Pours black-brown with a foamy, tan head. The nose has toasted brown bread, cocoa. Medium sweet flavour, more brown bread, vanilla, burnt marshmallows. Medium bodied with fine carbonation. Nicely balanced finish, with notes of cocoa, milk chocolate, soft roast. Solid.

Dan's Stag. Royal Naval Volunteers. Keg. Opaque dark brown beer, a few pale tan bubbles. Palate is light and mildly crisp. Sweetish and mildly tangy dark malts. Milky sweetness and a trace of candy fruits. Light semi dry finish. A light, sweet and fruity stout.

Draft at the Royal Naval Volunteers - Bristol. Pours mostly clear runybwith a creamy, off-white head. The nose holds honey, bread, leaves. Light sweet flavourbwith notes of leathery berries, bitter grass, earth, grain husk. Light bodied with fine carbonation. Dry and astringent in the finish, more leaves. So so.

Keg at Ghost Whale, 02/02/18. Clear golden with a decent white head. Nose is grassy, herbal, straw, light candied frutis, yeast, stale bread, lemon rind. Taste comprises Belgian yeast esters, citric tinged straw, grains, white peppery spice, lemon drizzle, crackers, herbal notes. Medium bodied, fine carbonation, drying close with light grassy bitterness. Nice clean drinking and refreshing saison.

Tap@Ghost Whale, Brixton, London - Gold pour with white head. Sweet malty and yeasty, some Belgian yeast, citrus fruity notes, medium to light body, spices into the close.
