The next beer might even be better. B.C."H." = British Cask "Head" - to be perceived as some disparate lonely looking bubbles, uncertain of their CO² content, and because of their scarcity, of undefinable colour. UFO's: Unspeakable Floating Obscenities MF: NO, that isn't it. That's mouthfeel, in civilized countries. I hereby solemny propose a law to be instated by all beergeeks, -amateurs, -lovers, -tasters, - enthusiasts that forthwith the use of the infernal spice, known as coriander, is forbidden for at least the five first years of brewing, and later only to be tolerated by explicit consent of minimum five different accredited beerorganisations. Infringements ought to be sanctioned by denouncement to the international beerpress and public drainpour of the offending brew.

Draught Small, disappearing head over yellow-ochre beer. Diary, asafoetida, dried citruspeel. Citruspeel, sweetish-bitterish. Some other grains? Rice, even corn. Bittereish vegetables. Medium bodied, slick, bit chewy, not very carbonated. Quite OK.

No head left, black beer. Bourbon², green pine as cypress or taxus. Molasses, vanilla and maple syrup. Super sweet and sticky, Bourbon, buffalo grass, cypress returning. Sticky as glue, full bodied, alcoholburn. Don't search for subtlety.

Batch #2 Small rim over muddy yellow beer. Asafoetida, citruspeel, some mould. Bitter-sweet fruit, citrus, hops almost conquered by the maltbacking. Quite slick, sleazy, medium carbonation. OK.

Some rim over black beer. Vanilla, tonka bean, chocolate, cocoa, and a bit cheesy. Hazelnuts indeed. Sweet, nutty, chocolate. Maybe how pastry stout ought to taste. Faint ashy extra, and somehow, spirit is suggested. Full bodied, heat, chewy, voluptuous. Punch-in-the-face pastry. Wonder what Baudelaire would have to say about this.

No head, jet-black beer, still. Bourbon and white distillate. Some resin, pine, cypress, chocolate. Hot chocolated, almost without diary; Bourbon, some nice hops. Nuts, Tonka beans, dessert chocolate with liqueur. Sticky, viscous, syrupy, and almost furious alcoholburn. Almost overdoing it. Almost.

No head, hazy orange-ochre beer. Sour grapes, old wood, horseblanket, leathery, dank notes. Dry-sourish with a distinct sweetish underbuild. Sour grapes, sourish banana, horseblanket, lemonpeel. Acidburn and -thinning, lipsmacking acidity. Aftertaste has a flavour of yellow berries. More lambic-y you die, west of De Panne. And I think this could get bone-dry with some aging. The pronunciation asked, it doesn't even resemble what's spelled - good Goidelic habits upheld.

Draught Dull yellow beer with some lace. Green papaya, faint asafoetida, vegetable scrapings, citrus. Sour-sweet fruity flaovurs, again green papaya, some other grains. More delicate than the nose strangely. Acidthinning, low carbonation, vivid sour flavours, some acidburn. Brettanomyces seems to hide behind the fruitflavours, making it all the more original. Pretty good, and starting from lager, at that!
