On tap. Brown color, creamy foam. Aroma: sweet, caramel and other fried malts. Taste: caramel, malty, lightly burnt, dried fruits and a bit sour.

On tap at BrewDog Glasgow. Brown, fairly dark and fair,y impenetrable. A fair bit of lacing on the glass. Oak, root beer, chocolate on the nose. Sweet taste overall but there’s a notable fresh hoppiness to the end of the sip leading up to the finish. Highly carbonated and refreshing. Sarsaparilla in the aftertaste. Not a complex recipe but certainly tasty and an extremely drinkable example of the style.

Pours brown from the bottle with a beautiful, thick and creamy head that slowly susides. The aroma has the malty sweetness of a Bavarian Helles, but with a chocolate undertone. This feels like a prelude to the taste, which reminds me of a black and tan, but you could also just say Schwarzbier. Notes of honey, chocolate, but also a vague green apple sourness. The flavors feel faded out on a light-bodied palate that feels out of place here. A nice try, nothing great, but it slowly grew on me.

En préambule, une petite précision s’impose. La bière dégustée le fut sous l’appellation Santa Paws et non Baby Dogma. Et force est de constater que la dénomination Baby Dogma lui aurait peut être convenu davantage, tant celle-ci est à cent lieux d’une bière de Noël. Ce n’est donc pas en tant que bière de Noël que je la juge car on friserait alors le hors sujet (manque de puissance, manque de chaleur, pas d’épices). Et c’est donc d’une bière toute en finesse et en classe, que je parlerai. Ces deux caractéristiques, nous les retrouvons en verre. Un brun profond surmonté d’une mousse couleur café crème d’un centimètre s’affaissant cependant relativement rapidement. D’emblée le nez présente le cadre : fruits rouges mûrs (dont pruneau), café et chocolat, le tout subtilement mélangés. L’attaque est splendide et présente des notes pures et limpides de café et de chocolat, sur un fond très peu sucré, faisant briller d’autant plus les arômes. L’amertume apparaît alors, délicate et précise avec de très beaux arômes de café. L’arrière bouche est cependant peu marquée sur des notes plus suaves de pruneaux et de miel. Une meilleure intégration de l’arrière bouche à l’amertume aurait néanmoins été appréciable, les deux donnant davantage l’impression de vivre leur vie en parallèle sans immixtion. Bien entendu le 4,5 % Abv ne permettent pas une explosion des saveurs, mais ils soutiennent de façon assez incroyable l’ensemble et permettent de préserver la finesse des arômes. Le final, d’une bonne longueur permettra de fixer les arômes en bouche, et en plus de ceux de café de laisser apparaître de très belles notes de tabac roux. Si on excepte la déception de ne pas se trouver au devant d’une bière de Noël, cette Santa Paws saura ravir les amateurs de bières aux notes torréfiés, toute en finesse.

Bottle as Brewdog Santa Paws 4.5 %. Pours clear darks reddish brown with huge light brown head. Aroma is malt, malt syrup, iron, rust, caramel and brown sugar. Taste is light to medium sweet, light to medium bitter and faint acidic. Body is creamy with light carbonation. Finish is long and balanced sweet and bitter with notes that follow the nose plus notes of apple, soy sauce and burnt caramel.

33cl bottle of Santa Paws from Beer52.com. A chestnut pour with a loose creamy, cream-coloured head; toffee aroma with some spicy hops; rather thin in the mouth with a dry, burned caramel taste and an oak-barrel woodiness and some vanilla towards the end; leaving a fruity malt finish. It’s a pity Innis & Gunn can’t come up with something as good as this.

Bottle from Beer52. Ruby-black with a middling beige head. Smooth chocolate and roasty malts. It’s simple but tasty and very well balanced Nice, I enjoyed this.

Bottle (as BrewDog Santa Paws). Hazy amber/ruby body with a thin beige head. Faint lacing. Aroma of toffee and caramel. Flavour of rust and honey. Thin to medium body with a smooth texture. Soft fizz. It’s not particularly complex but it’s a nice sweet beer.

33 cl. bottle as "BrewDog Santa Paws". Dark amber colour with a fluffy, lightly tanned head. Sweet aroma with toasted notes, caramel malts, fruits, honey and toffee. Taste is light sweet. Medium body with a creamy texture and a soft carbonation. Finishes slightly dry with bread and toasted note. Nice Brown Ale with a lower alcohol content.
