The traditional sour beer uses the wild yeast found around the farm. This gives the beer a soft, refreshing sour taste. After a year of aging on a barrel this beer is ready for consumption. Each batch of Zure van Tildonk is carefully aged in our cellars at the Engelburcht Monastery for several months prior to release.

26 July 2018. At Republiek, Bruges. Cheers to Ian!
Pours hazy dark orange with a quickly dissipating, white head. Funky aroma of brett, green apple, lemon, leather, barnyard, some cheese, oak. It tastes medium to heavy funky sour, lots of green apple, vinegar, and light woody bitter, grassy too, note of leather and lemon. Tart finish, funky & yeasty, lingering wood, faint hint of bread retronasally. Medium body, slick texture, lively carbonation. Very 'wild' but I can't really enjoy it.

Bottle shared by F+M. Hazy straw with white head. Tart citrus, green apples, hay, green grapes. Somewhat yeasty and doughy with a strangely bitter ting to it. Decent enough.

Trevlig.

330 ml bottle into tulip glass, best before 2/31/2019. Pours slightly hazy golden amber color with a 2 finger fairly dense and fluffy white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big tart/sour lemon, lime, orange, peach, pear, green apple, melon, white grape/wine, hay, straw, grass, pepper, toasted oak, leathery/musty funk, wheat, cracker, and white bread; with light notes of oaken vanilla, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, oak, and pale malt notes; with great strength. Taste of big tart/sour lemon, lime, orange, peach, pear, green apple, melon, white grape/wine, hay, straw, grass, pepper, toasted oak, leathery/musty funk, wheat, cracker, and white bread; with light notes of oaken vanilla, white wine vinegar, and yeast/oak earthiness. Light-moderate lactic tartness and light yeast/oak tannin spiciness on the finish. Lingering notes of tart/sour lemon, lime, orange, peach, pear, green apple, melon, white grape/wine, hay, straw, grass, pepper, toasted oak, leathery/musty funk, wheat, cracker, white bread, light vanilla/vinegar, and yeast/oak earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/acidic yeast, oak, and pale malt flavors; with an awesome malt/tart/sourness balance, and zero puckering/astringent flavors after the finish. Light-moderate increasing dryness from tart/sourness and yeast/oak spiciness. Medium carbonation and body; with a very smooth, moderately bready/grainy/acidic, fairly crisp, and lightly tannic balanced mouthfeel that is great. Zero warming alcohol for 6%. Overall this is a fantastic lambic! All around outstanding complexity, robustness, and balance of fruity/funky/acidic yeast, oak, and pale malt flavors; very smooth, crisp, and easy to drink with the modestly acidic/tannic/drying finish, never overly lactic. Glad I let it age for a bit, this is by far the best version I've had. Amazingly well developed funky barnyard Brett/Lacto complexity; balanced bready malts and nice oak barrel presence. A highly enjoyable offering, and spot on style example.
