COTSWOLD CRAFT BEER SINCE 1994
Using traditional methods our beers are brewed in small batches, and our Head Brewer Colin Williams oversees every aspect of the process. From the milling of the malt, the boiling of the hops, to the filling of the casks โ everything is lovingly crafted to ensure that our beers reach you in perfect condition. Each beer recipe is known as the Grist. Colin and his team come up with the recipes, using over 20 years experience they work out the perfect blend of malts, hops and other ingredients. The night before a brew, the appropriate amount of malts are weighed out and loaded into the hopper of our vintage mill.

Cask pint (hand-pulled) in The Cock Hotel, Wellington Shropshire on 7th June 2018. Pump clip claims it's an American IPA. Nice clear and clean amber body, white blanket of foam on top. Certainly hoppy, but not over the top West Coast IPA hoppy, or cloudy like the new East Coast IPA's, so not too sure where the name comes from, maybe using American hops? Anyway the finish was dry and the aroma had both piney and fruity hop notes, as did the taste.

Cask @ Castle Hotel, Manchester. Golden with a head. Has a deep overbearing berry-sweetness.

Cask half-pint at The Crown Inn, Oakengates Shropshire on 20th Oct 2017. Light golden body, white head. Crisp and clean tasting with a citrus leaning in both the aroma and taste, underlying light maltiness flavour wise, liked it, even if it had a citrusy taste.

Cask at The Fox, Worplesdon. Floral and fruity aroma, a dog definite sweetness to it. Light brown. Thick creamy off-white head. Sweet and sour, with a malty base. Tinned fruit in syrup, mixed with sharp berries. Sweetness verges on sickly, before a bitterness takes over. On the light side, with a thin body. Average carbonation. The finish gets astringent. Not convinced this was fresh. Didnโt particularly enjoy it. Taste didnโt work for me and no body to it.

Cask half-pint in The Cock Hotel, Wellington Telford on 8th Mar 2017. Smooth tanned head on a very dark body. Roasted, toasted maltiness with chocolate and vanilla like aromas and flavours, fairly dry and bitter finish: ideal last beer of the session.

Cask-conditioned on gravity, at the Draperโs Arms, Bristol February 2017. Near black in colour, with a hint of purple and small, beige, head. Sweet porter, with some toasty malts, hint of plain chocolate and plenty of blackberries, which came across as an added essence. So so.

Bottle, source not recorded. Poured clear dark maroon/brown with an average sized off-white to beige head. Aroma of malt, quite highly roasted, chocolate, caramel, light hop, touch vanilla. Medium plus sweetness and bitterness. Medium to full bodied, slick to oily texture, soft carbonation.
