Bottle. Palm Speciale glass. 10C. Clear pale amber with an off white head that’s soon less than a coat. Aroma has caramel, toast, spices, a distinctive herbal orange and lemon (that I’ve only noticed before in Grand Ridge’s Hoppy Frog and I guess might well be Triskel). Rather thin, carbonation is perhaps a little low. Sweet caramel and hints of red berries, herbal citrus, dry at the end with moderate bitterness. Well made and quite classy but just a little underpowered for my tastes.

The beer is a cloudy yellow color with a medium thin white head that evaporates steadily to an outer ring. Short strings of lacing on the glass. Aroma of fruit, spices and wheat. Light-bodied with flavors of fruit, coriander and grainy malt. The finish is mildly spiced with a citrus aftertaste. Slightly above average overall.

Bottled, from random bottle shop in Melbourne, Victoria. Clear mahogany volour, small head. Caramel and milk chocolate upfront. Mid sweet with medium body and clean, rounded mouthfeel. Some chocolate,notes of coffee and spice. Mid bitter finish.

Chestnut brown. Thin head. Light and vaguely caramelly nose. Light, sligthly fruity, toffeeish flavour. Light body. Ok brown-ish ale but the word "light" comes up way too much.

Draught at White Rabbit brewpub, Healesville. On July 28, 2013.Hazy golden color, fluffy off-white head. Malty, hoppy, fresh taste. Medium mouthfeel, medium bitterness. Malty, bitter aftertaste. Fresh, amlty, hoppy scent.

Draught as a pot size at Embassy Craft Beer Bar, Brisbane. On July 23, 2013.Cloudy yellow color, white head. Sweet, malty, herbal, spicy, yeasty, estery banana, some citrus taste. Fresh, spicy, estery aftertaste. Smooth mouthfeel, low bitterness. Some apricot aftertaste as well. Sweet, herbal, spicy scent.

Draught as a middy size at Macquarie Hotel, Sydney, on July 16, 2013.Roasted, sweet, malty taste. Roasted, mineral aftertaste. Sort of fizzy high co2 mouthfeel, medium high mineral like bitterness. Clear dark brown color with red hues, light brown head. Sweet, mellow, malty, roasted scent.

330ml bottle. Brown-ruby amber colour, thin tan foam head and aroma of malt, abit roasted, with slight chocolate & biscuit notes. Taste is malty, sweetish, caramel, some fruitiness and lingering bitterness. Smooth mouth feel, light bodied, medium carbonation, bitter finish. OK.

You get some unexpected wafts when you sniff White Rabbit in your glass. There’s plenty of caramel and toffee, but also resin, pine, tobacco and something that i can only describe as Melbourne Water. Almost like I’m sniffing an ice block. The creamy head unfortunately belies a somewhat watery palate dominated by a very light hoppiness and some late chocolate. Unusually for a dark ale, I recommend this beer for a warm summer’s day.
