From a humble fruit comes a Noble Cider. We started with a simple mission and very little cash! After cobbling together enough funds to build an apple press and with a few connections at local orchards, we began our journey to create Asheville's first hard cider company.
Hard cider was America’s original craft beverage. Founded in the new 'Craft Brew Mecca' of Asheville and North Carolina's apple country, Noble brings together a rich local history of agriculture with this region’s exciting craft beverage industry.
Our goal is to craft delicious ciders using fresh fruit with no artificial flavors or ingredients. Today we offer a full range of Traditional and New American ciders and meads. Noble can be found on tap and in bottles in select cities throughout the Southeast. We hope you enjoy our products!

Single from Tasty Beverage in Asheville. Pint glass pour. Fizzy, clear, MGD gold body. Smells like Jamaican ginger ale with a slight hint of apples. Taste is better then expected. Slick, somewhat carbonated body. Tannic apple wine, honey, real ginger, soda water. Lingering bitter finish over softly tart apples. Boozy. Not a fan of Noble ciders, but this was solid enough to share over bbq.

Owner of the Hop Shop where I had this on draft pulled the keg collar for me and I took a picture of it and tried (tried) to upload it to Ratebeer. No idea if it was successful. As we were debating the details of this cider, the rep walked in and explained that the cidery does very small batched of various things, but they're gone before they get a chance to post anything about them, which is why there isn't much internet information on this one. He also explained that the cidery does both barrel aged and non-barrel-aged versions of all their small batches. So there you go. Golden color pink hue, still. Big bourbon aroma, subtle strawberry. Taste has vanilla, tannins, berries and subtle cacao. Interesting.

Guest tap @ Lexington Brewery. Tulip pour. Gold, clear, bubbly nucleation. Looks as expected. Smell is minerally, yeasty & faintly melon-like. Taste is of melon, banana, plastic, saline, & spent apples. Fermented down to nothingness. Thin, sparkly, dry & faintly tart. Champagne yeast, not a fan.

Draft at Universal Joint. Clearish pinkish red color with bubbles. Aroma of sour cherry. Taste is not too sweet cherry and apple flesh. Refreshing change from drinking beer all day.

Draft. Slightly hazy very pale yellow color, still. Aroma of light spice and fruit. Taste is earthy apple, fairly dry prolonged finish. Interesting.

Draft at Wedge during RBWG 2014 - Asheville. Pours very pale, clear yellow. Very sweet, a little syrupy, somewhat herbal. Medium bodied, fine. Sugary finish with ample ripe apple. Meh, fairly sugary overall without much depth.

On tap at Pizza Peel. Clear pale yellow with no head. Aroma is light dry Apple, light body, no carbonation, and no lacing. Taste is apples with a dryer finish.
