From a humble fruit comes a Noble Cider. We started with a simple mission and very little cash! After cobbling together enough funds to build an apple press and with a few connections at local orchards, we began our journey to create Asheville's first hard cider company.
Hard cider was America’s original craft beverage. Founded in the new 'Craft Brew Mecca' of Asheville and North Carolina's apple country, Noble brings together a rich local history of agriculture with this region’s exciting craft beverage industry.
Our goal is to craft delicious ciders using fresh fruit with no artificial flavors or ingredients. Today we offer a full range of Traditional and New American ciders and meads. Noble can be found on tap and in bottles in select cities throughout the Southeast. We hope you enjoy our products!

Rounded apple base, cherry cordial, industrial.
Cranberry juice, a little extra lime acidity, alcohol.
Medium tart but slippery texture turning parched.

Clear, filtered, pale gold, lingering lace.
Soapy, restrained Citra-ish hops, dusty peach ring nose.
Bittersharp, leaning sweet. Strong floral, faded twangy citrus hops, lemon, very light astringency, mellow tea tannins.
Fizzy carb, slight pucker, nice lemon acidity.
Surprisingly good.

$4.95 single via Appalachian. Clear Solo cup at home. Dull, kinda clear, pale medium gold, ring of soda lace. Fresh juice nose, oaky, floral, dessert apples, bottle tequila mix, obviously back-sweetened. Taste is obvious pineapple juice & tequila essence with a very humble grocery store apple sweetness. Plum-y, slight veggy bitterness, mild vanilla, it's trashy but fresh & appropriate. Low fizz, touch of body, sharp, tart, easy abv for the list. Whatevs.

Panda courtesy of SHIG, cheers Shawn! Golden colour, white foam head and aroma of spice, cinnamon, apple, herbal tea. Taste is sweet, appley, spiced, apple pie, some cinnamon hints, slight tea undernote, with light acidity and tannin. Medium bodied, fine carbonation, dry finish. Quite drinkable.

$3.85 single from Appalachian. Pint glass at home. Slightly murky amber, thin head. Sweet & aromatic. Buttery, cooked apples. Slight hot fermentation, veggy, faintly vinous. Mellow & dry blueberry skin, tart dessert apples, candied lime, some sour cherry essence. Strong carb, off dry, itchy finish, bit of a headache, decent abv bite. Kinda good. Just short of soda. That's a bit embarrassing.

Can: Poured a pale golden with a white head. Aroma is apple, a bit musty, yeast. Taste is apple, tannins, semi-sweet but finished dry.

Can: Poured a unclear golden with a white head. Aroma is apples and hint of ginger. The taste is where all the ginger was hiding for me. Apples blended in to provide a balance.
