Description
ANXO (AN-CHO) is a common first name in Northern Spain and it is also a Galician synonym for Basajaun, a Basque mythological creature that is something like a benevolent Bigfoot. Having taught humans agriculture, ironworking, and shepherding, Basajaun retreated to the darkness of the forests where he remains a bridge between the natural world and humanity.
Restaurant veterans Sam Fitz, Rachel Fitz and Cooper Sheehan founded ANXO after working with beer for the better part of a decade. Cider offered new and exciting unexplored opportunities that were confirmed after touring cider country in England, Spain, Basque Country, France, and the Pacific Northwest and Eastern Seaboard of the United States.
Nowhere is cider more intricately tied to culture and food than in the Basque Country, and a second trip to the Spanish and French sides confirmed our desire to offer Basque-inspired food. Chef Alex Vallcorba grew-up in Barcelona and vacationed in the Basque Country before working at Asador Etxebarri. Now a veteran of DC cuisine, Alex and his wife Sara joined the ANXO ownership group to complete the project. ANXO’s food is inspired by his grandmother’s Catalan cooking, Basque cuisine, and more than a decade of working with local ingredients in the District.

Really quite nice. A lot of flavour going on here. Some hint of vanilla, apple skins, crab apple. A little late autumn leaf life vibe. Pours pale yellow, almost white. Tangy and light sweet end. Tap at tasting room.

Rather a nice cider. Some tannins, hint of leather. A little sweetness and some orange. Pours clear light white. Tangy and light sweet end. Tap at tasting room.

On tap at Red Apron Union Market, pours a murky gold/green with no head. Nose has plenty of apple, cheesy too. Funky and earthy in the mouth too. A little stinky with grass. Green apple. 7 3 8 3 13

Can from Holiday Market. Pours a clearish straw gold with no head. Funky, horseblanket aroma with grape must, cobweb, oak and catpiss. Low carbonation with pear, apple, peppercorn and more must and funk. Lingering pepper, tannins and apple on the finish.

Can from Covenhoven. Translucent oily gold body. Yeasty, vinegary, saline apples scent. Spiced apples & oranges. Vinegar sour. Tannic, asprin bitter finish. Low carbonation, yeasty feel. A restrained wild. Tasty.

Tap @ Schilling Cider House, Portland. Pours clear gold with a light mist. Aroma of funk, wild apple fruit. Taste has a nice funky wild warmth to it, soft tannic undertones, really nicely rounded. Excellent crisp medium dry cider.

Can from Covenhoven. Pint glass at home. Pale yellow, slightly chill hazed, nearly still brew. Smells of softy bittersweet apples. Mellow yeast, saline, flour. Crisp, cava-ish, lemon, dust, seltzer, sulfites. Obviously dry, but not bone. Refreshing, but grows tired. Solid, if a little pedestrian.
