Description
ANXO (AN-CHO) is a common first name in Northern Spain and it is also a Galician synonym for Basajaun, a Basque mythological creature that is something like a benevolent Bigfoot. Having taught humans agriculture, ironworking, and shepherding, Basajaun retreated to the darkness of the forests where he remains a bridge between the natural world and humanity. Restaurant veterans Sam Fitz, Rachel Fitz and Cooper Sheehan founded ANXO after working with beer for the better part of a decade. Cider offered new and exciting unexplored opportunities that were confirmed after touring cider country in England, Spain, Basque Country, France, and the Pacific Northwest and Eastern Seaboard of the United States. Nowhere is cider more intricately tied to culture and food than in the Basque Country, and a second trip to the Spanish and French sides confirmed our desire to offer Basque-inspired food. Chef Alex Vallcorba grew-up in Barcelona and vacationed in the Basque Country before working at Asador Etxebarri. Now a veteran of DC cuisine, Alex and his wife Sara joined the ANXO ownership group to complete the project. ANXO’s food is inspired by his grandmother’s Catalan cooking, Basque cuisine, and more than a decade of working with local ingredients in the District.

Sampled at the Kennedy Street location. Pours a hazy gold with no head. Earthiest offering by far, almost meaty, rotting cores, cheese cloth. Sweetness nicely rounds things out. Impressive. A lot of apple character, but not a classic apple flavor.

On tap at the Kennedy Street location, pours a clear, dark gold with no head. Nose is bright, fruity, sweet apples, juice. Flavor is very crisp, fruit forward. A little yeast. Finishes off dry.

Draft pour at Snallygaster 2017. Poured a hazy yellow color with a small white head. Aroma was heavy vinegar notes, sour. Light apple. Flavor was heavy balsamic and white wine vinegar. Tart. Perhaps a little too harsh, could use a little bit of evening out to balance the tartness with the cider itself. Otherwise, pretty good.

12oz pour, hazy gold with a bit of lime green flickering, a ring of white head. Nose has green apples, lemon juice, white grape. Flavor is a little washed out, apples and lemon. Watery finish, lightly tart.

12oz pour, very dark gold, no head. Nose has some sweetness like ice wine, apple cores and apple juice, a little caramel. Flavor is nice, lots of depth, apple juice, apple cider, apple cores, some mild baking spices. Finishes dry. Nicely done.

Tap pour to a bottle, bottle pours to a glass, murky yellow with a lime green tint, no head. Bright nose, lemon, green apples, raw apple, crab apple. Flavor follow, tart with green and raw apples, some cheese here, mild wood notes. Tart and dry finish.
