Description
ANXO (AN-CHO) is a common first name in Northern Spain and it is also a Galician synonym for Basajaun, a Basque mythological creature that is something like a benevolent Bigfoot. Having taught humans agriculture, ironworking, and shepherding, Basajaun retreated to the darkness of the forests where he remains a bridge between the natural world and humanity.
Restaurant veterans Sam Fitz, Rachel Fitz and Cooper Sheehan founded ANXO after working with beer for the better part of a decade. Cider offered new and exciting unexplored opportunities that were confirmed after touring cider country in England, Spain, Basque Country, France, and the Pacific Northwest and Eastern Seaboard of the United States.
Nowhere is cider more intricately tied to culture and food than in the Basque Country, and a second trip to the Spanish and French sides confirmed our desire to offer Basque-inspired food. Chef Alex Vallcorba grew-up in Barcelona and vacationed in the Basque Country before working at Asador Etxebarri. Now a veteran of DC cuisine, Alex and his wife Sara joined the ANXO ownership group to complete the project. ANXO’s food is inspired by his grandmother’s Catalan cooking, Basque cuisine, and more than a decade of working with local ingredients in the District.

On tap at ANXO, pours a clear blonde with a small white head. Aroma brings out crisp apple skins, with white wine yeast and a touch of oak. Flavour is similar, with crisp apple skins, spritzy white wine yeast, and a touch of earthiness. Spritzy and bright. Decent.

Super clear golden coloured body with no head at all to speak of, nor even any movement at all. Aroma of pure fresh apples with some honey, a lot of yeast and bread notes with a dash of vinegar and funk noticeable. Light-bodied; Sharp vinegary flavour with some lemons and yeast noticeable, but the most noticeable components are apple cider vinegar coupled with some yeast, bread, alcohol, grain and more vinegar and sour elements. Aftertaste shows some more acidic and soured green apples with a touch of canella and perhaps a drop of nutmeg in here, but this really is about vinegar balanced with apples and added in here with some yeast and the alcohol is noticeable towards the very end. Overeall, I'm not sure quite what the fuss (at least in terms of price) is with this, aside from the fact that it's made in town (or at least the address says so), but this was far more expensive than I typically would have bought for a cider, especially, but one that I will not pay again. I sampled this twelve ounce can purchased from Whole Foods in Pentagon City (Arlington), Virginia on 09-December-2017 for US$3,99 sampled at home in Washington in front of the store on 10-June-2018.
