Description
ANXO (AN-CHO) is a common first name in Northern Spain and it is also a Galician synonym for Basajaun, a Basque mythological creature that is something like a benevolent Bigfoot. Having taught humans agriculture, ironworking, and shepherding, Basajaun retreated to the darkness of the forests where he remains a bridge between the natural world and humanity. Restaurant veterans Sam Fitz, Rachel Fitz and Cooper Sheehan founded ANXO after working with beer for the better part of a decade. Cider offered new and exciting unexplored opportunities that were confirmed after touring cider country in England, Spain, Basque Country, France, and the Pacific Northwest and Eastern Seaboard of the United States. Nowhere is cider more intricately tied to culture and food than in the Basque Country, and a second trip to the Spanish and French sides confirmed our desire to offer Basque-inspired food. Chef Alex Vallcorba grew-up in Barcelona and vacationed in the Basque Country before working at Asador Etxebarri. Now a veteran of DC cuisine, Alex and his wife Sara joined the ANXO ownership group to complete the project. ANXO’s food is inspired by his grandmother’s Catalan cooking, Basque cuisine, and more than a decade of working with local ingredients in the District.

Can from Covenhoven. Glad to finally see this stuff up here. High hopes? ...Maybe. Let this chill in the fridge for a few days. Pale, ginger ale/gray opaque pour. Not the prettiest stuff. Pear, gum, yeast, potato, candy, straw. Smell could mean anything. Taste is gum, yeast, light lemon, watery apples flavor, soft tartness, soft bitterness. Not sweet, too yeasty. Mushy. Alaline. Sparkly. Not sure what's going on. Meh.

Can @ Hops Hill in BK. Tulip. Red, punch-y, not quite clear color. Quickly dissipaiting pink on white head. Yeasty, soft apple nose. Was expecting more. Taste is inconsiderately tart upfront, apple core, sour cherry, soap, bitter cheese rind. Thin, sour, dry, chappy lips, harshly carbonated. Tasty experience. Excellent! Tart yellow/red/crisp apples; fruit peel/berries/red wine/herbal/yeast earth. Dry/semicrisp carb. Fairly acid/tannic dryness. No harshness. Very smooth. Great apple complexity/balance with wine yeast. Mild warmth. Very impressive as expected.

Fantastic! Tart red/green/crisp/sharp apples; fruit peel/hay/straw/grass/wood/sugar; lt honey/vanilla/pepper/musty Brett funk. Semidry/semicrisp carb. Lt acid/tang/tannic drying. No pucker/astringent. Very flavorful/refreshing. Very impressive stuff.

Draft pour at Snallygaster 2018. Poured a clear yellow color with a small white head. Aroma was green apples, light tartness. Small apples - crab apple tartness. Light semi-sweet notes. Light and mild. Wife wasn't a huge fan.

On tap at ANXO, pours a clear blonde, barely any head. Aroma brings out crisp green apples and dry apple skins. Flavour brings out an effervescent champagne yeast and crisp apple skins. Crisp and dry. Pleasant.

On tap at ANXO, pours a clear pale pink with a tiny head. Aroma brings out red apple skins, with a touch of tannic red wine. Flavour is quite soft, with red wine tannins, grape and apple skins. Nothing overly complex, but it works okay.
