Description
ANXO (AN-CHO) is a common first name in Northern Spain and it is also a Galician synonym for Basajaun, a Basque mythological creature that is something like a benevolent Bigfoot. Having taught humans agriculture, ironworking, and shepherding, Basajaun retreated to the darkness of the forests where he remains a bridge between the natural world and humanity.
Restaurant veterans Sam Fitz, Rachel Fitz and Cooper Sheehan founded ANXO after working with beer for the better part of a decade. Cider offered new and exciting unexplored opportunities that were confirmed after touring cider country in England, Spain, Basque Country, France, and the Pacific Northwest and Eastern Seaboard of the United States.
Nowhere is cider more intricately tied to culture and food than in the Basque Country, and a second trip to the Spanish and French sides confirmed our desire to offer Basque-inspired food. Chef Alex Vallcorba grew-up in Barcelona and vacationed in the Basque Country before working at Asador Etxebarri. Now a veteran of DC cuisine, Alex and his wife Sara joined the ANXO ownership group to complete the project. ANXO’s food is inspired by his grandmother’s Catalan cooking, Basque cuisine, and more than a decade of working with local ingredients in the District.

Draft at Salt Line. Poured a clear, kind of dark blond color with a small fizzy head. Aroma was light apples, touch of a light acidic character, very mild. Mild apple sweetness in the finish.

Many thanks to Erzengel for sharing! A clear golden cider. Aroma of mild sweet fruity apples, soft tart apples and sulfit. Taste of mild sweet and riped apples, sulfits, dry fruits.

Many thanks to nimbleprop for this can. Smooth sour rich intense cider aroma in the nose. The cider starts intense and rich. Lots of tart cider apples, sourish sulfur from the typical Basque apples. Fruity and dry, tannins on the tongue, rich and fruity with a great apple-fruity sourish sulphur aftertaste. Very nice and deep, rich and very dry. Nice one.

500ml bottle from Whole Foods Springfield. Poured a fizzy yellow color with a small head. Aroma was light sweetness. Tasty pear, light grape. Really nice.

Sampled at Kennedy Street. The first in a flight for good reason. Pours a clear pale gold, no head. Nose is bright apple and apple juice. Some green grape. Flavor is very straight forward tart apple, no juice just meat, some grape too. Clean finish, bright but dry. Like a chardonnay of cider.

Sampled at Kennedy Street, pours a hazy pale gold. Nose is earthier than other offerings, some distinct Cascade hop, lemon, even a touch dank. Flavor is green, apple but grass too, Cascade is still there. Slick, spritzy finish. Interesting
