Description
ANXO (AN-CHO) is a common first name in Northern Spain and it is also a Galician synonym for Basajaun, a Basque mythological creature that is something like a benevolent Bigfoot. Having taught humans agriculture, ironworking, and shepherding, Basajaun retreated to the darkness of the forests where he remains a bridge between the natural world and humanity.
Restaurant veterans Sam Fitz, Rachel Fitz and Cooper Sheehan founded ANXO after working with beer for the better part of a decade. Cider offered new and exciting unexplored opportunities that were confirmed after touring cider country in England, Spain, Basque Country, France, and the Pacific Northwest and Eastern Seaboard of the United States.
Nowhere is cider more intricately tied to culture and food than in the Basque Country, and a second trip to the Spanish and French sides confirmed our desire to offer Basque-inspired food. Chef Alex Vallcorba grew-up in Barcelona and vacationed in the Basque Country before working at Asador Etxebarri. Now a veteran of DC cuisine, Alex and his wife Sara joined the ANXO ownership group to complete the project. ANXO’s food is inspired by his grandmother’s Catalan cooking, Basque cuisine, and more than a decade of working with local ingredients in the District.

Sampled at Snallygaster 2023. Tart apply nose, apple skins too. Light funk and some tannins in the mouth along with moderately sweet apple juice. Mostly dry finish.

Can pours cloudy pale, looks a lot like my own homebrew cider. Smell is typical dry cider, like there is no sugar added. Taste is very dry and pleasant, no real ill attributes. Solid hard apple cider flavor. I like the fact there are no unfermented sugars in is. Good co2 level as well. Yes, just plain old fermented dry apple cider, with no apparent adjuncts. Simple and enjoyable. This aint no sugar pop woodchuck, hehehh. Goes down easy and its much better than expected. I just wish my homemade tasted this good. Maybe its the yeast?

Tap at the bluejacket Brewpub. A light yellow green coloured pour with no head. Aroma is semi sweet, candy apple white sugars. Juicy. Flavour is composed of semi sweet, tangy, tart, prickly carbonation, light pithy tart. Palate is tart and tangy, highish prickly carbonation.

355ml can shared with Soph. Misty yellow. Aroma of sulphuric funk, citrus. Immediate whoosh of wild sour yeast and a fine, super spritzy carbonation. Definitely a strong wild element at play here. Strong tart acetic funk, sulphuric linger, tart with apple skin and core. Interesting wild cider, but perhaps a slight over carbonation.
