Pour is a chill haze blonde with a large white head. Aroma is chalky white bread malt and a very herbal hop. Flavor is again a super herbal lemongrass hop with some bone dry cracker malt. If you like the spicy and herbal noble hop variety then I have a beer for you. Quite tasty.

Canned 11/12/24, drunk 12/5/24. Dark. Small, light tan head to spotty cover. Ash, a bit of peanut or bean. Low roast, lots of mineral. Roasty, hoppy, maybe a touch of bean or peanut. Soft, neutral texture, not watery, with good malt depth for its size/style. Still gettin some beany DMS or something like that...love the texture though.

Canned 8/7/24, drunk 12/5/24. Moderately cloudy, raspberry-copper-blonde. Small, off-white head to light cover. Lotta lemon juice in the nose, especially for being 4 months old...A bit disappointingly so. This must have been hellaciously lemony when fresh. Salty, wheaty, a bit earthy, but, ultimately, a bit too lemony-dominated. Can't get at the yeast or anything. Just getting lemon acid and oil and flavor. Decent body, good attenuation and malt.

Canned 8/6/24, drunk 12/5/24. Quite cloudy, white grapefruit-to-maize. Large, creamy-ish, off-white head. Good retention. The citrus isn't punchy or acidic and there's nothing sweet or off-putting here. Plaster, mineral, earth, pepper...odd that it's cloudy but it doesn't smell dull/muddled. Bright and juicy with a soft, nutty wheat character and actually a hint of agave and sweet citrus sugars. Not getting a lot of salinity, but maybe there's a bit of emphasized hop from it? The grapefruit is still fairly strong, though far from dominant. Still very soft in texture, the wheat doing a lot of work and the saison yeast calming things down. Taking it as more of a gose, I think it's done very well. No doubt the four months of cold conditioning in the cooler has greatly improved this.

Can from Bine & Vine. Pours clear gold with a large foamy white head. Aroma has banana and clove. Med body. Dry. Lightly roasty malt, but banana and clove are the main flavor. Pretty nice Belgian.

On tap at Blind Tiger. Pours a clear amber gold with a white head that dissipates quickly to the edges. Aroma has light tart fruits and dry wine with a bit of flora and sweet grains underlying. Flavor starts with flora and light tart fruits with a bit of dry wine and a touch of bread backing.

Tip Tap draught, 11/8/24. Clear, strawberry-rhubarb. Small, off-white, pink-flecked head. Nose is very soft mineral and plaster. Great yeast-forward nose without being dominated by barrel or grape. Clean, no big sugar or hard lactic/malic acid. Similar flavor with a bit more acidity on the finish but never problematic. Low oak, with excellent malt depth. Grapes are mild, never acidic or too drying. Mild juiciness with easygoing fruit. Lingering malt and house culture.

Sample at the roost pours a clear, still gold with a ring of white head. Nose is big lemon and acetic acid, Sweet Tarts, floral. Flavor is lemon juice and stake wine, sherry, tannins and a good amount of barrel. Big tart, oily finish. Grippy.

Pours dark mahogany tinged cola into an English pint. Tan head with good retention recedes to skim surface. Dark toasted pumpernickel, pit fruit and cocoa aromas. Soft with dark chocolate covered raisins, prune and toasted pumpernickel upfront turning to earthy bitter espresso in the dry, lasting finish.
