The vast and delicious cuisines of Central and South America hold a treasure trove of flavors, aromas and textures, much of which feels right at home in a well-made beer. We combine these ingredients and ideas with our own experiences to make subtle and deeply delicious beers, not mere novelty items. Each beer speaks with our voice and adds to the story. We put the best ingredients together so that the whole beer adds up to much more than the sum of its parts.

On tap at Kickbacks in Jacksonville, pours a clear orange with some frothy, white head. Nose has mostly citrus, orange, white grapefruit, some tomato, a little celery, malt, some guava, papaya too. Quite interesting. Flavor has a harsh bitterness that distracts off the top, orange, white grapefruit, soap, some perfume, persimmon. Full bodied and bitter on the end.

Bottle. Pours opaque black with a large brown creamy head that dissipates slowly with nice lacing. Aroma is roasty, lactose, cocoa, light molasses. Flavor is medium sweet, light bitter, coffee, roasty, lactose sugars, hints of ashtray and lingering bitterness. Medium body.

Bottle. Pours a clear gold with a white head that dissipates nearly completely. Aroma has notes of crisp grains with a bit of straw and a touch of a grass note. Flavor has a bit of sweet grain with some straw, a touch of grass and a light crispness.

Links, Chicago tap: pours reddish with a small white head and no lacing. Aroma is condensed milk, all spice, and malt. Taste is kind of roundly sweet and plenty spicy. I guess you either like these flavors or you dont. i don’t really. Meh.

Bottle at Uncle. Pours a cloudy brown with small beige head. The aroma is roast, chocolate, caramel. Medium mouth, very sweet, spice, earthy malt, bitter finish, decent.

State and Lake, Chicago tap: pours dark brown with a beige head. Aroma is light chocolate and pepper. Chili taste is not very light in there, and this is not spicy as some beers are, but the flavor is there. Mostly a malty beer that is moderately sweet. Not bad.

Pour is a clear yellow with a large white head. Aroma is sweet syrupy malt with a bit of malt liquor like adjunct filler. Flavor is again a heavy sweet malt with a bit grassiness but finishes with some corn syrup thick sweetness. It does not have a horrible taste or aftertaste. It’s just a heavy, sweet, thick malt. I don’t get Impy pils as a style.

From a bottle it is dark, smells dark and tastes dark. A little coarse at first. Does get a little more acceptable towards the middle. Finish is simply porter that thinks its more than 6%, trying to be the little brother of impy stout. .
