We believe in focusing on the key aspects of the brewing process that most affect quality and stability. We believe in big bold flavors. When we say something has a unique ingredient in it, you can bet you will taste it. We are growing our barrel aging program as fast as possible and exploring new techniques with wood fermentation, wild ales and exotic ingredients.

Pours black, small, nearly no head. Smell is intense maple, slightly roasty. Taste is full, heavy roast, but balanced. Somewhat chocolaty. Toward the end, a blast of maple takes over the complete taste. It's coffee like aspect works very well with the medium sweetness of the basebeer. Vanilla is recognizable, but far less intense. Lower carbonation, full body. Very nice maple stout. Could perhaps be improved by even more body, and perhaps a nutty side-taste to complex things a bit more. But as is, straight up maple, I'm a big fan already.

Canned, 473 ml shared with Miro B and Max. Black with brownish head. Chocolate, maple, coffee, vanilla, some bitterness, quite sweet. Medium to full bodied.

Can. Hazy gold beer, small pale cream colour head. Palate is light and semi dry, a good fine minerally crisp bite. Thin but sweetish malts. Good crisp piney hops. Bright light spicy citrus. Orange and tangerine. A little lemon zest. Crisp finish. Nice beer. Crisp, spicy, fruity.

473ml can. Jet black colour with late awakening, small, thick, creamy, moderately lasting and lacing, tan head. Sweet-ish, chocolately. dark malty aroma, notes of chocolate, maple sirup, vanilla. Taste is sweet, chocolately dark malty, notes of chocolate, maple sirup, vanilla. Viscous texture, smooth and soft, silky palate. Balanced, harmonious composition.

473ml can. Hazy, orangey golden colour with average, frothy to creamy, slowly osteoporosing, moderately lacing, white head. Sweet-ish pale malty, tropical fruity and slightly piney, grassy, hoppy aroma, hints of mango, some orange, lemon, a touch of honey. Taste is citrusy hoppy, sweet-ish pale malty, notes of orange, mandarine, some lemon, a bitter zesty touch, some grass, some pine, some floral honey. Oily-watery texture, minimally cloying palate, fine, prickly carbonation, lingering, sweet-ish malty and bitter, citrusy hoppy finish. Rich and complex, superbly balanced (with quite ponderous weight on both scale pans), harmonious, nice subtleties as well. Well crafted and all anyway - the selection and composition of malts seems to me extraordinarily serendipitous in this case. Very good!

2019 Bottle shared at Blind Stout Share. Pours a pitch black with a small bit of brown head that dissipates. Lots of baker's chocolate on the nose with some prune and raisin with bourbon as it warms. Oak and big deep, rich chocolate notes on the palate, coupled with milk chocolate underneath. Quite thick and viscous visually and on the palate. Lingering bourbon, oak and chocolate. A beast of a beer.

Bottle shared at DACBE New Year's share. Pours a deep brown to black with a small beige head. Very cinnamon focused nose with some vanilla and chocolate as it warms. Cinnamon, chili and agave on the palate. There is a lot going on but the chili and cinnamon definitely stand out. Some bourbon notes towards the finish and more cinnamon.

Taster at Standard market, because there’s no way I can manage a second pint, let alone their Liter steins. Deep brown color, a thin layer of foam inside a ring around the edges. Yes, I’m giving it a “5” because I’m happy to see these autumnal colors. Dang it if I can’t get much of a nose right now, as my own nose picked this time to get stuffy. But certainly nothing untoward is leaping out at me. Taste is rich and malty, with notes of pipe tobacco (like I’ve ever tasted pipe tobacco…) also notes of plum and caramel. Dark German malts usually make me think of smoke, but I have none of that here. Admittedly, this is after a pint of Oktoberfest beer, but this one stands well enough on its own I like finding this solid bock on tap to break a few of the rules of an Oktoberfest beer time.
