Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Bottle that Felipe and I acquired in trade by pooling resources. Pours opaque black, small brown head, good lacing. Aroma is cinnamon, pepper, chocolate, just a touch of bourbon. Flavor the same, medium sweet, light bitter, a bit of spice. Full body. This was a wonderful beer, and the spiciness did not disappear in the barrel, but the bourbon notes were very subdued, and did not really bring out anything special in the overall flavor or complexity of the beer. I think I like the regular Abraxas a touch more.

Bottle. Strong black walnut, banana, and wheat malt aroma. Cloudy brown with giant light tan head. Bittersweet black walnut, banana, and wheat malt flavor - can’t really get anything else - the black walnut dominates. A well made beer, but black walnut is such a dominant flavor that it overwhelms much of the subtler weizen characteristics.

Location: Draft at Ginger Man (NYC), 8/15/13

Aroma: It has a sweet nose of bubble gum, candied sugar, yeast, and some spice
Appearance: The pour is a clear dark orange color, with an off-white head, and thick, drippy lace
Flavor: The taste is med-heavy sweet with some balancing spice notes as well
Palate: This one is medium bodied, with some ABV heat, and a fairly soft carbonation
Overall Impression: This was a little bit one-dimensional sweet for me. The spice adds a little balance, but it just isn't any better than decent.

Bottle at Chrisso’s pre GBBF shindig 2013. Nose is woody with some higher fussel alcohols.Weird fruity sweaty socs. Earthy hop and dry finiah.

Bottle at Chris O’s pre-GBBF shindig, 2013. Reddish-brown pour with a beige head. Coconut, chocolate and caramel aroma. Quite an earthy taste. Bit of caramel and seemingly cucumber(??) in there. I like this.

Draft at Pizzeria Paradiso - Old Town Alexandria. Poured a hazy light orange color with a medium sized white head. Aroma had notes of yeast, some notes of malts, fruits. Flavor was some spice notes, dryness is from the honey. Yeast character, spice, malts, fruits.

Bottle at Chris O’s pre-GBBF shindig, 2013. Yellow pour with a white head. Lemon sherbet, light spice and vanilla aroma. Musty flavour, some corn and pear in there. Light fruit linger. Not bad.

4oz sample at Churchkey’s 3 Stars 1st Anniversary event. Pours a translucent amber with some white head. Boozy nose, caramel, orange, vanilla, a little metallic. Flavor is sweet, brown sugar, malt, orange, lemon, vanilla. Sticky finish. Odd.

Bottle at Chriso’s Pre-GBBF Shindig 2013. It pours hazy golden amber with a medium off-white head. The nose is earth, dough, spice, touch of smoke and wood. The taste is earthy, dough, wood, spice, stone fruit, damp leaf, earth and light funk with a dry, earthy finish. Medium body and moderate carbonation. Ok, but I’m not blown away by my first Perennial...
