In the early 1990s, Roger and Linda decided to market their own beer: a custom-made high fermentation blonde. The Bon Secours was born! These were promising beginnings but they still dreamt of creating their own brewery. A dream which became reality when they bought the machinery from the Deneve brewery in Schepdaal and inaugurated the first brew in 1996!
In 2007, the NV Brasserie Caulier was declared bankrupt. At the beginning of 2008, the activities were transferred to a private limited company of the sons of Roger Caulier, who subsequently adopted the name Brasserie et Distillerie Caulier. As of 2012, Laurent, Bertrand and Vincent joined their parents in the adventure. In order to respond to the growing demand for its products, in 2018 the Brewery began a large multi-annual programme of investments with the goal of tripling its production capacity. The historical Brewing House has been extended, new fermentation and storage tanks have been added, and the bottling line has been modernised.

From tap. Herbal, but almost creamy flavor with licorice and a hint of sourness. Hopbitter finish. Bottle: horse blanketaroma, hoppy, café au lait. Very hoppy flavor, milky with apple, just a bit citric. A bit skunky, leathery and earthy, but that adds to the charm and depth of this beer. Thinnish and slightly acidic.

Big frothy head. Aroma has citrus, melon and cinnamon. Hoppy, herbal citric flavor. The alcohol is very well hidden. Long grapefruit finish. Very well made complex and delicious beer. Re-rate: deducted a few points, because the alcohol doiminates a bit too much.

Apple, yeasty aroma. No head at all. Apple and licorice flavors, a bit vinous. Disappointing and by no means perfect beer, not well balanced.

Small head, that disappears almost immediately. Yeasty aroma with pear, syrup and coffee. Good lacing. Very sweet, sugary and syrupy with some licorice. Alcohol present, but hidden because of the sweetness. Raw and heavy, but not impressive.

Lots of sediment in the bottle, vercloudy. Almost no head. Yeast and pear in the aroma. Sweet, sugary flavor with vegetables and hops. Hardly any lacing. Slightly metallic aftertaste. Disappointing beer. Rochefortoise version: 6 2 5 2 9 = 2.4. Caulier version: Blonde with the tiniest chunks of yeast. Honey aroma with a touch of citrus. Hoppy, citric, honeyish flavor. Flowery. Friendly blonde, medium bodied.

Cane sugar aroma with licorice. Sweet flavor with coffee, licorice and chichorei. Bittersweet aftertaste.

Pinkish red color. Huge pink head. Red berries aroma. Yeasty flavor, red berries, but not very prominent. Some burning alcohol. Just a hint of berry sourness. Earthy with wine-like tannines.
