Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

What’s not to like? If you’re seeking a juicy, tropical and mellow sour beer, this really hits the spot. Relaxed acidity, bright and fresh pineapple, decent bittersweet grapefruit. Very well balanced. Firmly not a novelty beer. This is a breakfast beer for sure.

Vault City Tins Trio At Home #3 of 3. An all black deviation for this usually all sour Scottish brewer. It's welcome though, smooth with lashings of vanilla and chocolate in taste, although gone missing in aroma.

Vault City Tins Trio At Home #2 of 3. A dark cherry colour, with a haziness. The fruit is strong in both aroma and taste, a little sweet but not exactly like the canned cola version, perhaps closest in its slightly different aftertaste. It's here where its lower-end sourness is also at its most impactful. Feels too rich to have too much of this one.
