Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

440ml can. Pours murky reddy orange with a medium head. Aroma is tangy rhubarb with a little custard. Taste has sweet and sour rhubarb throughout with a little custard on the finish.

330ml can. Pours jet black with a small head. Aroma is sticky caramel, oily roast and dark chocolate. Taste has oily milk chocolate and caramel throughout. Very rich. Cakey mouthfeel.

Can at Drinkoteka, huge thanks Donato for sharing! Greenish-golden body, off-white head. Citric aroma, but also a bit beety, earthy. Similar, simplistic taste, citric notes - primarily citrus peel, with some earthy, beety notes. Dunno... not the happiest with it, feels like the base isn't the best.

Can from Systembolaget. Am I getting old and grumpy and jaded from these kinda beers? Maybe. The aroma is that of squishy sweets - the ones with a white milky bottom and a fruit jelly top. That was also the kind of taste really - extremely sweet. High in fruits. Peachy pink look. It's OK but njaaa.

Poured black in color, not much head.
Liquid milk chocolate and cocoa, chocolate eggs, true to the name. Medium bodied, way too sweet though. Sticky.

Keg at Waterloo Tap. In their own glass. Are we in Belgium? Dark. Probably cola brown in a better lit room/ I was wearing glasses. Foamy off-white head. Aroma is super sweet- honey and chocolate... slightly more so than a standard that bar. Flavourwise it's less accurate. It's very sweet but with a distinct sour streak. I guess that's could be mead-esque element. Light-medium bodied. Slick. Soft-fizzy carbonation. Long dry somewhat astringent finish. A stout-mead blend?

Keg draught at the Real Ale Classroom, Leicester city centre. Pink and hazy with a thin smattering of white head. Raspberry aroma, notes of vanilla. Sweet taste, lots more raspberry and touches of blackcurrant with marshmallow and maybe a little bubblegum. Light body with slightly heavy tight carbonation. A decent enough sour.
