Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

7/4/2026. Draft at BrewDog Gatwick Airport. My first BrewDog visit since all the drama. Glad this one survived, the staff are always good, even if the choice is always pretty basic. Nothing from BrewDog I hadn’t had before, but was pleased to see this Vault City on offer. Board said it was 4% not 5%, I’m assuming it’s dialled down in case people overloaded on this pre-flight? Poured fine. Aroma is strawberries and cream. Nice bit of zingy tartness. Light carbonation. Perhaps a little thin. But enjoyed it. Good to get some juice with my breakfast.

44 cl can. Copper red colour with a thin white head. Tart fruity aroma with raspberries, salty notes, jam. The taste is light sour. Medium body. Tart fruity finish. Nice.

Can that Em gave me (bought from Waitrose) - thanks Em! Dirty, murky pinkish-red colour with a white head. I've never thought thought chocolate works very well in a sour beer and at first the odd aroma seemed to reinforce this perception. There's creamy milk chocolate up front with a touch of yoghurt in a very smooth mouthfeel. But then strawberry juice comes through, and the creaminess suddenly makes sense. With just a mild tartness, this is more sweet than sour, and after a few gulps it felt like a bowl of strawberries and cream with just a light dusting of cocoa. I quite enjoyed it by the end, but as with all such brews I'm not convinced it's really beer anymore.

330ml can.  Pours jet black with a small head.  Aroma is sweet and syrupy maple syrup and roast.  Taste is sweet and cakey to start, with a syrupy roast finish.
