Description
Mixed fermentation brewery specialising in locally sourced, heavily fruited and hop-forward beers with a sense of place and seasonality.

Big flavours and bright colours, that’s what you can expect from Vault City Brewing. We’re the UK’s biggest sour beer producer and we’ve been making fruit-forward, modern sour beers in Edinburgh since 2018.

Our mixed fermentation style and distinctive house culture create the perfect base for real fruit ingredients, which gives our beer its intense aroma and flavour, not to mention the eye-catching colours.

Can at home picked up from a supermarche. A clouded golden orange coloured pour with a lasting creamy white head. Aroma is semi sweet, vanilla, creamy oats, apple custard, pear canned fruit, tangy apple crumble. Flavour is composed of semi sweet, vanilla, wheat grains, apple crumble and custard, tangy pear, Creamy grains. Palate is rounded, creamy, semi sweet and tangy, fine carbonation. Not terrible, but a bit tough to get through the whole can.

Tap at Winter Affair 2026. Someone had me try it while I was preoccupied with two others, hah... just noted that it's a very good hazelnutty stout. To be rerated if given the chance.

Black topped with a light khaki cap that thins to a swirl.
Nose is chocolate, nutty, almond, dark malts, light spice.
Taste comprises cacao nibs, honeycomb, spice, dark malts, nutty, booze.
Full bodied, light oily feel, semi drying close with a balanced rising boost.
Tidy pastry.

Keg draught at the Needle and Pin, Loughborough. Dark brown, almost black and mostly opaque with very little head. Vinous aroma, light sourness with an overlay of coffee. Complex taste with a gooey coffee sweetness, some Marmite, cooking chocolate, Amaro bitterness. Thick, thick body with low to medium carbonation. Ooooh. Special.

Tap at Winter Affair 2026. Golden-orange body, off-white head. Yeasty aroma, coriander. Yeasty taste, coriander, bit meaty (autolysis?), sweetish, bit herbal, smooth, weird umami notes... emm... not thrilled.
